RECIPE: www.veganricha.com/vegan-coff... (I followed this recipe but omitted their spices and added my own)
Add to the batter:
2 tsp ground cinnamon
1 tsp ground cardamom
1/2 tsp ground nutmeg
1/4 tsp ground cloves
Add to the topping:
1 cup chopped pecans (or any nuts you like)
2 tsp ground cinnamon
1/4 tsp ground cardamom
1/4 tsp ground nutmeg

A food I recommend you try is ‘ Calabacitas con queso’ it’s like a squash soup with vegan cheese, it also has chopped tomatoes, onion, potato and corn 🎊💗

Here in Portugal we have an amazing one which is called Bolo de Bolacha (The Cookie Cake?) and it is delicious! It’s a classic here. I don’t know how to make it vegan tho.. The recipe goes something like this:
Mix 300g of butter; 200g of sugar; 2 table spoons of strong coffee and 2 yellow part of the egg (i don’t know what it’s called in english 😂).
Wet 300g of Bolachas Torradas (a tradicional kind of cookie here) with the coffee.
On a dish put a layer of cookies, then the butter mix and so on until you no longer have ingredients. Put in the freezer.
If you can make this vegan you must try it, it’s f* delicious 🤤

For the recipe to be purely vegan, the sugar actually should be raw/turbinado! Bleached sugar is usually made using animal bones 😕
