Omg that ending was so cute I’m so glad you left that in! Also I wouldn’t beat yourself up about the sinking bit, I’m vegan/GF and it’s soo hard to get baked goods to come out looking right even when following a recipe exactly (the no eggs + gluten free flour combo is tough to work with). As long as it tastes good I’m happy!
I cant be the only one who thinks she is literally glowing she looks by far the BEST with short hair and no bangs it completely suits her face and facial proportional and overall style and vibe so much better I have been following mikan since 2018 and this is the best hair style she has had
Vina- I love your outlook. Several times throughout the video, you say that something is "enough": your Japanese level, how many kitties you have, how far ahead you've planned. Expectation management like that is so important and I don't think enough people are practiced in it. Something you can try to keep them from sinking is to leave them in the oven to cool down with the oven. Just crack the door very slightly so it stays warm inside and slowly comes to room temperature. The temperature shock of taking the tray out can be what causes a very delicate cake to sink. If that doesn't work it's probably just the recipe :)

It may just be because its gluten free flour. Doesn't tend to rise well and cakes tend to be denser. Sure it still tastes great!
The cupcakes look lovely omg, as for the cupcakes sinking, maybe because they don't have egg, or a stabilizer so it doesn't hold its shape well? Vegan baking is hard cause you have to substitute like 3 things for one ingredient

That's why I always check if they're done with a toothpick. If nothing sticks to it, then the cake is done.

Just a quick cooking tip!!❤ Baking soda/baking powder creates little bubles in the mixture, that's why it's light and fluffy and rises when you bake it.
Because of this, you should be careful with the dough after adding the baking soda, you don't want to burst the bubbles. And they also disapper over time. So don't over-mix and get it in the oven asap!!🤗🍰 ✨
But I do have to say, the cupcakes look really yummy 💜☕

When baking cupcakes or like even cake a tip to know if they are done is poke them with a toothpick if it comes out clean they are baked through. You probably added too much baking soda that's why they didn't fluff up.

For gluten free, vegan baking, you typically need a blend of flours for a good rise and texture (and to avoid that sinking when they cool-in your case, I don’t think it had anything to do with the temperature or cooling process). Flours like almond or coconut will not really rise on their own (especially without egg). You need to blend with something like rice flour, sorghum etc for a better crumb and rise. Not sure what is readily available in Japan, but we have a variety of gluten free, all purpose flour here in the US which is already pre-blended so you don’t need to buy a bunch of specialty flours and combine them. Maybe you can find something similar in Japan or order online? The flavor sounds absolutely delicious!

Someone might have already posted this, but: when making whipped cream, you can put plastic wrap over the bowl, then just poke the metal mixing piece through! You have to be careful to not rip giant holes as you whip but it works pretty well to prevent splatters 🥰

sometimes with vegan baking the tops will look fine but without a binding agent the inside will remain a little undercooked causing them to sink no matter what, but! if you put in like a flax seed “egg” that usually helps

I know this video is from a while ago but the cupcakes (maybe) arent raising because you arent using something like self-raising flour or baking soda which helps the cake essentially puff up.
the cupcakes probably sunk bc theyre gluten free! gluten free baked goods tend to sink depending on the flour used (if the flour has xanthan gum or not i think) so i wouldnt worry 😅

Hey Vina!! i make gluten free stuff all the time and they also sink. it’s probably just cause of the almond flour. i make your carrot cake all the time and it always sinks so that is probably why! x
