Easy Tapa: Artichoke, Ham & Sun-dried Tomatoes

- This week, we’re keeping things easy and trendy with a delicious tapa. Here’s how to prepare it:
Artichoke and Ham Tapa with Soft Boiled Egg
Ingredients:
- 6 canned artichokes
- 3 sun-dried tomatoes
- 1 green pepper
- Chopped Spanish ham (amount to taste)
- 1 soft-boiled egg
- Olive oil
- Black pepper
Instructions:
1. Prepare the Tapa Mixture:
- Drain the canned artichokes and cut them into bite-sized pieces.
- Chop the sun-dried tomatoes and green pepper.
- In a bowl, combine the artichokes, sun-dried tomatoes, green pepper, and chopped Spanish ham.
2. Cook the Egg:
- Bring a small pot of water to a boil.
- Gently add the egg and boil for 4-5 minutes to achieve a soft-boiled consistency. The egg should be warm when added to the tapa mixture.
3. Combine and Season:
- Peel the egg and slice it.
- Mix the sliced egg into the artichoke mixture.
- Season with salt and black pepper to taste.
- Drizzle with olive oil.
4. Serve:
- Serve the mixture on toast or as a dip with your favorite bread.

That looks so good- especially when tou added the soft boiled egg and smushed (mixed) it up.
I was thinking...maybe you can put that ontop of a brie and air fry it- then dip some crusty bread/pita chips rigt into that... ;)
