Invert sugar, mash the cereal with enzymes for 60 minutes, combine, cool, add yeast, ferment.

Glad this worked out for you. I and others tried this cereal mash and it didn't come out to well. Mine fermented out and when I took the lid off sacrifice to the liquor fairy it smelled like Taking the lid off recepticle for the porcelain throne and almost puked. It went out in the weeds.

Though puns aside, I did figure out a way to completely bypass the problem of preservatives with the sugary kids cereals that doesn't require half a pound of yeast to strongarm your way through it. Leave that cereal out of your wash completely. do a stripping run of the sugarhead without the fruity pebbles/fruit loops, whatever. Then, between the stripping run and the spirit run, add a few cups of your cereal in some cheese cloth to the low wines and soak it overnight. When you do the spirit run, a significant, but not overpowering flavor from the cereal will pass through to the final spirit.
I did an experimental batch a few months ago with some cheap off the shelf vodka and some fruity pebbles. The fruit bomb faded a lot but was still distinct over a week or two after bottling but the residual flavor of the rice cereal came forward. It was odd, but pretty tasty. I never proofed it down, and later used it as a base for a citrus blend 'cello. It turned out surprisingly good.

Since the amylase enzyme is only meant for clearing starchy beer, the quantity needed for what you did here would be much greater than the recommended dosage. Correct? But what is the recommended dosage for this use case?
For this brand it's about 1/2tsp per 15 pounds of grain. Way overkill for what I needed, but I was playing the part of a deranged cereal killer.

Nice! P.S. In fact everything we do - we add sugar at the end... :) This is it! All my experiments with different types of "wines" finishes with sugar adding to the "wine". I decade not play like that anymore. Of course it is "interesting" to make something... but after all distillations, filtrations and so on we get... ? What we get? We get alcohol which taste like... ? Like what? Like "sweet tasty vodka"! This is it! How we spend our money? Sugar is dirt cheep! Fruits, if they are from market place is very expensive! How to get flavor? Yes - we get it with thumper like You, Bearded or...? We add fruits before secondary distillation in our filtered first distillate. This is it! Ideal solutions! Amen. 🎃🎃🎃🎃🎃!

I have a Odd question can you make a working mash out of stale bread like a few loads of what ever types of bread you may have around?
Yes. Jesse interviewed a couple that uses stale bread from local bakeries to make vodka or gin. You just need to do some math to work out the weight of bread you need to hit your target gravity after mashing with enzymes to get the sugar out of the starches.

Perhaps the Liquor Fairy decided 2021 was already weird and horrific enough and that all the weirdness this concoction needed was for it not to be weird. I don’t know about you but after over a year of living in a pandemic and safety measures being relaxed here and there, what used to be normal and self-evident suddenly feels utterly weird and at times downright creepy. When safety measures get imposed again (fourth wave and all) it feels like a return to normal of sorts.

In the same "nasty candy" line as candy corn, I wonder what circus peanuts would do? If you never had circus peanuts, think marshmallow, melted rubber from old tires and orange food coloring that I'm sure causes cancer. These things make candy corn look delicious.....
