I just recently made my giant pandan coconut cake with palm sugar and it was excellent! I used the same ratio of white sugar to palm sugar. One thing though, because gula djawa is very dark, the cake turned out completely brown rather than green but I didn't mind at all. And since gula djawa is solid, I had to shave it and then finely chop it before using it. Thanks so much again for this video and your advice. You're awesome!

Also, if I didn't want to use the skinless mung beans and just wanted to make one big green pandan flavoured cake using tapioca starch, rice flour, coconut milk, etc, would that be possible? If so, do you by chance know how long I would steam the whole thing for? Would it also be 4 minutes or perhaps longer?
I buy this cake from My local asian market except it is layered white/Green? Could this mean it is just the cocnut layer half colored green the other simply not colored? or does this cake always use the Mung bean in it? Thank you =)

Hi JWong! I'm sure you can steam it all at once but you won't be able to get the difference in colors. Also, the yellow layer has the beans. What you can do is probably just do 3 layers. Divide the green in half. Steam green 8 mins, add yellow and steam 8 mins, then last layer of green for 8 mins. Let cool completely. Enjoy! ;)

Cornstarch will not be a good idea because it will not give the sticky and chewy consistency that tapioca flour provides. Thanks for watching!

That sounds interesting! Maybe alternating layers of taro tapioca and coconut? Reminds me of the Chinese taro tapioca dessert.
Im having a hard time. I let each layer sit for four minutes but for the top layer, it's still liquidy. Should I let it heat more.
