Loads of information, This was the first time I heard using the pepper relish recipe for either, Great information, Lady, Just got my first batch for this year and hopefully the no heat jalapeño are as good as the regular jalapeño but if needed I'll redo this information but regular jalapeño. Pepper jelly is great stuff! And you did a great job....however you scared me with several things you did. I don't want you to take this as criticism just safety precautions. When hot packing you should leave your jars in the water bath till ready to fill, ( prevents temperature shock) carefully take out emptying water set on towel. Place funnel use your measuring cup or ladle to fill jar that is setting on towel. Then you can use towel or hot mit to steady jar while placing lid. Then use grabber thing-a-migig to put in pot. Also you should always start your timing when you're at a rolling boiling. To prevent temperature shock (jar explosion) place on towel instead of rack, and leave set for 24 hours without moving. I learned the hard way and boiling contents hurt like hell. Please don't take criticism just an old lady that has been canning for 40 years. Best of luck. Blessings 😇

I used the towel around the jar it worked really goodthank you but my jelly did not set up its runny

Never needed to hold my jars with a towel and safety is important so I handle with a wash rag in case if the jar breaks.
How long will the sealed jars last at room temp if unopened.
I use a Ulul to dice and it's less tairsome.
What is a Ulul?
Instructions say 1 mins after rolling boil and that's 120 tops
