    The cows and the beagle agree, pork is definitely the meat of choice for this recipe.

    LOL. Spent the first 25 years of my life eating blackeyed peas and cornbread on new years eve. Married a gal of Norwegian descent and it was boiled cod,butter and potato tortillas (lefsa) for the next 25. For the last 13 years it's been homemade tamales thanks to our extended family. Now I'm thinking this year, tamales, black eyed peas and collard greens along with an ice cold glass of buttermilk sounds good.

      My Norwegian mom and her folks fed us lefsa, kumla and lutefisk all through Christmas and New Years. More than a half century later I still haven't forgiven them.

    • @elkhunter8664
      @elkhunter8664 5 ปีที่แล้ว +1

      @@TartanJack LOL. My kids were not keen on fish and lefsa or kumla, but I liked it. Luckily my wife is 3rd generation and so even she despised lutefisk. Now I might have to try it just out of curiosity.

      Batter & Deep fry the Cod! Turn it into fish & chips.

    • @TartanJack
      @TartanJack 5 ปีที่แล้ว +2

      Lukefisk is an affront to humanity. God made it to punish the Norske for settling too far north so that they had to feed on dried salted cod in the winter. Grey, gelatinous, swimming in a sea of vile broth that no amount of salt can fix. Yeah. Then one learns how real people were meant to eat. Bacon fat, lard, ham. Real food. Leave them cod alone.

    Looks great, down here in Bayou country, the most important step with collards is a thorough cleaning. Rinsing all the grit and critters off in a big ol sink full of water. We do it several times before we commence to putting in the pot.

    After Sherman's march to the sea with all the crops burned and everyone starving everywhere, One of the few things that come up from the burned fields were the black eyed peas. Folks with Black eyed peas to eat were considered lucky, and so eating black eyed peas for the new year is still lucky! As told to me by my Great grandmother. Hope you have a happy new year for 2019!

    Always love my collards, nice to see a diff. way of doing things. We grew our own, and after that first frost,, mmm boy them was a delight at our leisure. Ham hocks, collards and a little sugar for the bitterness. Raised our own meat and salt cured in the smoke house. (Deal on the Peas) I lost some great-great kinfolks in Ga. at the end of 1865. General Sherman (Union) made his march from Atlanta to Savannah, 50miles wide and 100miles long. Killed all the live stock, and people were left with no food. Peas were stored in silos for feeding the live stock. All they had to eat, considered "Lucky to have". .. Thanks as always and God Bless

    THIS IS ABSOLUTE FOOLISHNESS! AND I LOVE IT! Blackeyed peas with the greens and carrots! Then you go and add bacon to the cornbread! TH-cam is getting on my nerves. I never got this notification! I wish I had seen this for New Years Eve but I will settle for Easter. This will definitely be on my table. Sorry for screaming so much but this is good eating. That ham steak took me back to my grandma's breakfast table. May she rest in peace. That happy dance describes the whole meal lol! Thanks for sharing.

    Hey Mr. Kent and Ms. Shannon, I had to let you know I tried these recipes today for New Years, and I believe these will become regulars, probably for more than just New Years day!! Awesome good food; the fried bacon corn bread is the perfect compliment to the soup. Thanks again for sharing!! :-)

    I took Shan's "makes a great Christmas gift" suggestion, and gave my 87 year old Dad a copy of your cookbook. As I've forwarded him some of your videos, he loved getting the cookbook, and he was flipping through it all evening. He still likes to cook, although more slowly than he used too, but he made a ham for Christmas dinner.
    BTW That bacon fried cornbread looks heavenly, and I loved collared greens!

    Dang Kent, This looks awesome, like you I grew up on greens, black eyes peas and cornbread and still fix a mess of it often. I've never had it as a soup but plan on it come New Years. Can't wait, you made me hungry. Beautiful country and a herding beagle lol. I have a cousin that had a pit bull that use to herd his horses from the pasture. " Zeus go get the horses" you saw nothing but dust kicking up. A herding pitt bull, funniest damn thing you ever saw

    Made this on NYD. There were a few modifications: black eyed peas made from dry and a can of Rotel in place of the green chiles being the main ones. And smoked pork chops instead of ham due to the market by the house not having ham. In any case it was exceptional, thanks for sharing!
