I can't believe how much money I've spent on books about how to make bread over the last few years, when your YT channel has been here the whole time. My first true success has been thanks to one of your videos. Now every time I bake it works perfectly, no more wasted effort and ingredients. The only thing I have to adjust is the liquid ratio, Aussie wheat seems to absorb water differently, I guess it's bred (ha ha) to be more drought tolerant.
A triumph Jack. As much fun as making 20 loaves all at the same time. Rarely have I been so happy with a bake. Did 21 rolls in all the combinations you showed. I know these will wow the neighbours coming for lunch at the weekend. Many thanks.

I love the videos jack. Very new to baking and these videos are great. I watched you kneading videos then tried your bagel recipe.un fortunately, the rolling technique around your wrist described in the recipe didn't work and they busted apart when I boiled them. Like you said in your video about bagels. They looked horrible but tasted good so that was a win!!! I was wondering if you could create a video on how to make you bagles to accompany the recipe so I can learn how you gave them that awesome bagle shape. Thanks for sharing your joy and passion for baking!

I tried making (almost) all of the shapes, I didn't have any seeds so I just did flour and herbs for toppings, but my favourite shape was the crown :) 👑

40-60 minutes rest, then around 12-15 minutes for good colour at 220c with steam 👌🏻
