If you block boss with multiple units at the same time that's when it will do insta kill (e.g. blocking with reinforcements+golem or Hero+reinforcements, or if I remember I think maybe just even using both reinforcements triggers it too), but if you block and attack boss with one single unit such as 1 golem (or I think a single hero would work too) then boss won't do insta kill attack. However as seen in this vid you can still attack boss from a distance with reinforcements while blocking boss with a single unit and it wont trigger insta kill as long as reinforcements throw far from a distance.
According to Kingdom Rush wiki on Moloch: "His area instant kill has a 7 seconds cooldown. And he will use it only when there are 2 or more units near him." kingdomrushtd.fandom.com/wiki/Moloch

Hard and Veteran are the same thing. This game on the phone/iOS/android the difficulty levels are called (Casual, Normal, and Veteran) but before an update, on Steam/Flash it was called (Easy, Normal, and Hard). Veteran and Hard are the same thing, it just depended on what platform you played on. The Kingdom Rush wiki also points this out. There has been as update on the steam version since this video was posted that now shows the difficulty level as (Casual, Normal, and Veteran), but the actual difficulty setting stayed the same, this video was made before the update.
