    I've been hunting since I was 12 years old and never had canned rabbit until last night - Good lord what I have been missing all these years and this was wild rabbit a friend of mine had shot early winter!!!! So I had to get on youtube and find a video - that brought me here and what a great video - very helpful. Thank you.

    Love my canned rabbit!! I didn't know about letting the carcass set for a while!! Makes perfect sense, after 35 years of doing this, I'll finally get it right?? 🤔😂
    When my children & I fled an abusive marriage & received no child support, my job paid enough to rent a very old farm house, the phone & electric bills. There was enough for a loaf of bread, a pkg of bologna & some macaroni or rice or a couple cans of soup. One weekend while the kids were at their Dad's, I had a private little 'Pity Party' & spent some time crying & praying. The kids never complained but I knew we were all tired of bologna sandwiches!! Anyway while I was praying I felt God saying, "butcher a rabbit!" And of course I said, "you want me to WHAT??" I'd worked in a locker plant for 7 years so was no stranger to blood & guts, but.... I dug out a rabbit raising book, studied a little & decided the old rabbit that bit us every time we fed it was a good candidate. It went incredibly well. I pressured the carcass til it was tender, ran the meat through a meat grinder, added some seasonings & chicken broth & heated it. My son stepped into the house & said "Wow! Smells like chicken!!" I said "yep, does smell like chicken!" 😉 My daughter stepped in & said "Ooo mom, smells SO good, almost like turkey!" I said " It DOES smell very good!" 😉 We had it on buttered buns, it was WONDERFUL!!!! We feasted on that for a week before the kids noticed the mean rabbit was gone! By then the shock of eating rabbit had worn off for them. It's still a favorite of both my daughter & me!! Thought you'd get a kick out of this, I still have to laugh over our introduction to butchering rabbit!! God bless!! 😊

      What an amazing story!! This thread has a few of those and I love that! We had to trick one of our kids into liking rabbit meat. We put it in a couple of her favorite dishes ('chicken' and dumplings and 'chicken' pot pies, and after a week or so we told her what was really in it. "Wow! I DO like rabbit!" She exclaimed! So glad it worked out that way. Have you had goat? We have explained to the kids that sooner or later goat will be on the menu..

      @@SageandStoneHomestead I MUCH prefer goat burger to ground beef. (And I love gr beef!!) It's somewhat similar to veal.After those 7 years in a meat locker, seeing what some people would bring in to butcher for their family....I'm VERY picky! I ONLY butcher dairy wethers. And make sure they are grainfed. I have heard numerous people say they dislike Boer goat meat & I would have to agree. I think the Boer breed has been so 'bred up' for show purposes it has lost a lot of meat quality. My opinion there! I have also had a Kiko butchered & was impressed with the meat.
      Goat meat is very lean so you have to watch it when it's cooked, but I've never found it to be dry. I've also done roasts & canned some, it's wonderful!! My only complaint is you don't get a lot from 1 animal. 😞 But remember....goats are prolific & it doesn't take long at all to get way too many bucklings every spring! 😉

      We have all dairy breeds except one kiko nubian cross! So that makes me very happy to hear. The people I bought my kiko cross from said that they used to breed Boer but found that their parasite resistance was horrible and went to kiko. We unexpectedly sold all of our little bucklings in the spring but I'm sure that won't be a trend! We talked about intentionally holding back a couple to butcher.

      @@SageandStoneHomestead just be sure to castrate the bucklings, I've heard horror stories about buck meat! I always band them, by far the easiest for me.

      We banded a buckling last year and he is our resident wether! He is related to too many of my girls but he has been awesome as a companion animal when I've got goats split up into breeding pens, one of my bucks was done with his girls (Nigerians) by the middle of August and the wether has been a good friend for him while the other boys have their girl time!

    A couple of days ago I pressure canned rabbit first time ever, with bone in. My husband got 4 rabbits, that been shot by our friend. Hubby skinned and butchered the rabbits for me. I soaked them in salt water, washed them very well and pressure canned them with the bone in. Because our rabbits been shot earlier, they already set for a while before we even got them. So it was super easy to fit them into the jars, no stiffness at all. What I noticed is that every time I do raw pack, if I add a little chopped onion and garlic, plus himalayan salt into the jars, the result is always super delicious, much better than only using salt, in my opinion.
    Yesterday I opened the first jar and a 2nd small jar, that had one leg and all the inner bits from the 4 rabbits that we saved. I removed the meat from the bones - oh my, it came off so easily. In a pot I fried onion and garlic on beef dripping, then I added a big bunch of chopped peppers, later freshly chopped tomatoes (with the skin on). Seasoned it with himalayan salt, black pepper. Added the rabbit meat and inner bits, the broth that was in the jars, boiled it all together. Beside in another pot I cooked some rice with himalayan salt and mizo (this makes rise taste so amazing). Once the rabbit was hot, I added freshly picked and chopped parsley and lovage. I served it in bowls, rice on the bottom and the rabbit on top. Oh my, it was the best meal we had in ages. Even our 10 years old was amazed. So so delicious. People used to eat rabbit in the olden days, chicken was a luxury. Even when I was a child, one of my granny's been still raising rabbit for meat. And as a child, rabbit was my favorite meat (I can say that nothing has changed, as I tasted that delicious food yesterday), duck as 2nd best and chicken as the least favorite of all above. When my granny asked me in the morning what kind of meat I wanted for lunch (we always had the cooked meal at lunch time),most of the time I asked for rabbit. She always processed food on demand. Meat rabbits are big, up to 7 5kg. I remember when I asked for duck, my dad was moaning that doesn't have enough meat for a family 😂😂😂 He also preferred the big and delicious rabbit. But I loved stuffed duck too.

      @@SageandStoneHomestead We kept the heart, liver, lungs (as it is edible, even though lots of books tell to discard it, same for the chicken's gizzard, most people bin it, I think it is the most delicious part of the chicken) and the kidneys. All of them are very good for our health.

    I am preping for butcher day getting ideas of how I am going to preserve the rabbits definitely going to be canning some thank you for the information I usually add additional spices to my jars depending on what you are planning on using them for I recently canned up some meatballs and deer meat threw a whole clove of garlic into jars everything seems fine tastes great

      Yes you wait for the pressure to engage it and then get to the proper level on the gage according to your elevation.

      Yes it's totally possible! Just need to separate the cream from the milk and you can do anything with goats milk!

    Does it have to be vinegar to wipe the top? I just used water and am in the process of canning them now!

      Water is fine a lot of the time. Vinegar is just really good at breaking up grease and oils so it gets a reliably clean rim. Water is probably good though!

      you certainly could. I add salt only so it's more versatile in it's uses but you can season it however you like.

    How much water should I put in the pot, after I set in the jars? Do I cover the lids with water? Do I add water until the H2O is Under the lids? What is the correct water level?

      This will depend on the canner manufacturer's suggestions but 2.5 inches of water in the bottom of the canner before adding the jars is what I do!

    Ok know 1 ever tells you how mutch water do you put in you pressure cooker plus the jars

      That might be because it differs depending on the manufacturer, in my Presto it is a minimum of 3 quarts of water in the bottom. There is a line etched to the inside of the canner to show the minimum depth. Hope that helps!

      I would use it in stew-like meal, my grandpa used to go hunting when I was a kid and always brought rabbits ( big ones IDK what kind) and my grandma used to make them in this typical Portuguese meal we call "Bifes a la Portuguesa" it is typically made with red meat but my grandma used to replace it with rabbit or chicken ( because that was more affordable and fresh for us) and it was THE BEST!
      it's kind of a layering process of potatoes, meat, onions, peppers, tomato sauce, and a bunch of spices over white rice and veggies on the side!
      But again, where I'm originally from is an Inmigrant built country ( my family Portuguese), Russian, Spanish, Germans, and so on ... so we were exposed more to international dishes so now I miss them so I try to recreate it at home.
      Having said that, I'm not there, I have a rabbit but he is more of fertilizer than anything else
      I don't think I can butcher rabbits( not today anyway) I'm hoping that will change with time, I'm working on it.
      If you had to start butchering something today, what would you start with? ( now that you have experience) I was thinking to get quail and try? IDK why to me today that seems the easiest animal ( however if you feel like it's the rabbit I'll take that too, It might take me longer to get there but at least I know)

      Thanks so much for that delicious meal idea!! I love stories like that. Makes recreating that meal so much more special.
      I will get a tour of the milking area and all that on my video list! Definitely make it easily accessible for bringing goats in and out, and easy to clean. We have rubber grill mats on our stand so the girls won't slip around. They are easy to remove and hose down. Sometimes I just flip them over to the clean side and wash both sides when I go to clean them.

    What is your pressure canner? We can’t seem to find one that isn’t covered in plastic parts. We want what you have so if the power is out and we need we can “can” over a wood fire if needed

      Ours has plastic handles and the pressure gage is plastic. It's a Presto Pressure Canner! Look into the All American Canner too!

    How many rabbits did you use to fill those 7 jars?

      It was almost one rabbit per jar. I would say it was 6 rabbits but I forget off the top of my head! These also were not the biggest rabbits we could have used either. 2.5lbs each approximate!

      @@richardmang2558 I ended up buying an All American canner that holds 19 quarts, which is enough to hold a litter size of rabbits, 8-10. I’ve been real happy with it.

    Anyone have experience on adding something like fresh garlic and or hot peppers or peeper flakes while canning meat ?

      That sounds excellent! You can definitely do that. When you pressure can anything in combination make sure to use the cook time for the ingredient that requires the most time by itself. As an example if canned rabbit takes 25 minutes for quarts in a canner but peppers need 40, you'll want to can the combination of rabbit and pepper at the pepper timing because that's longest.
      These are made up times but look each of them up on the national center for home food preservation website to see what they say about each ingredient! Hope that helps and let me know if you need more guidance!

      Pepper flakes I wouldn't worry about at all. Garlic is probably fine too..but something like whole peppers included with the meat may need an adjustment. Spices are fine. :)

    This breaks my heart to see this. But it’s no different than what they do to chickens for humans to eat. But I just can’t help to feel bad tho.

      It's a little different especially in this setting because they are not farmed in a way that is stressful to them. Just one very brief, bad moment in life. ❤️
