Does the audio still go via phone speakers or does the audio signal still send to the jack, but since no speaker at jack we can't hear anything?
Just record shit and remove it after you done

You could buy a cheap USB sound card and wire it directly to that.

When you plugin your earphone in your mobile then your earphone's mic can communicate with mobile to receive and record voice or noise , earphone's mic is so sensitive grater then mobile's mic , earphone's mic can catch all the low noises and voice near by it . that's it . This won't lag. Its just a condenser mic. If there's any lag it will be due to the sound card its hooked up to.
