I doubted it at first but then I actually tried it and it worked!!! For those starting out, please make sure you're adding the water little by little and not a whole at a time :) Hope this helps you too!

I’m not a professional but I’m a highly skilled cook/baker with many years of experience - but chocolate is just my natural enemy and no matter how many times I’ve tried to learn to work with it I never ever get it right. I was following a high quality recipe and still managed to majorly split my ganache. I was about to ruin a special dinner and waste $20 worth of high quality chocolate. And never in a million years thought this would work, but I have it a shot and… it did! Perfectly. Really impressed (and ever more bewildered by the ways of chocolate).
I really thought I overheat the chocolate that's why my ganache looks kinda grainy and oily but thank God I was so afraid to add anything to the mixture, I ended up just whisking it gently until it becomes smooth. I didn't add anything, no water, milk or whatever
