How to Make Bourbon Mash - With

  • In this video series, we show you how to make and distill Bourbon mash. This particular Bourbon recipe was crafted by our very special guest, Jesse from ‪@StillIt‬, who is perhaps one of the top spirits experimenters in the world. Jesse tells us that this particular Bourbon recipe is similar to what is used for spirits like Pappy Van Winkle and Heaven Hill Bourbon. To make the recipe we add corn, barley and wheat to a brew in a bag (BIAB) mash system, convert the starch into sugar, cool, pitch yeast, then let it ferment.     I own a Clawhammer 8 gallon still and love it for distilling water . Emmett and Kyle have always responded to all my questions within a few days . Awesome customer service. Now I know why you have no distilling videos at clawhammer. I watch all of you guys. Your all great! Thank you all for great videos and knowledge .

    What a fantastic collab, Jesse is such a nice guy! When I started brewing it was actually because distilling is illegal in Denmark. Now I'm in love with brewing beer, but I still have that itch to make my own spirits.

    My Late Uncle in Italy distilled Grappa from grape pomace( crushings) for decades after he made wine. Perfectly legal in Italy.

    Thats a pasteurization temp at 147 f. The reason for this is to help your mash from becoming contaminated while it is fermenting. The bad bacteria dies at 140f and above and the good bacteria doesn't die till like 180f. You want to keep that good bacteria as it battles other bacteria to keep things clean. If you were to sterilize the mash at like 250f it would kill EVERYTHING. Then your mash is like an empty canvas at a paint store. I learned this when cultivating mushrooms. The most important thing is to not let your temp get above 160f and should be 145 - 150f to be safe.

    It's an antiquated law that needs to be repealed. I've never heard of it being enforced though, other than when people are selling, cause the government wants their taxes. It's crazy that you can legally destill lots of things, essential oils, other chemicals, etc but as soon as ethanol is involved, it's illegal unless you fill out a government form, pay lots of money, keep meticulous notes, and buy/build a seperate building for it.

    Hypothetically you might accidentally leave it out over night in freezing temp and the next day when thawing it to drink as beer, you get in a hurry and have to only keep the first half that melts and throw away all the clear frozen water "jacking" the mash/beer and increasing the abv....
    If this hypothetical accident happens 2 or 3 times u will end up with 40%+.

    From grains I can source, matching the recipe, I could only work out a diastatic power of 20.8. Wheat Malt - 60 Litner, Pilsner Malt - 80 Litner and Flaked Corn - 0 Litner. Total Litner divided by weight of grain = 189.8/9.09kg = 20.8 diastatic power. I thought the minimum had to be 30 (aiming for 40) if not adding enzymes???

      I'm just about do this and I'm here now because my math is pretty much the same as yours. It seems the enzymes were always going to be needed.

      You can, but not necessary? The grains have the nutrients to carry the yeast through to 1.000.

    I am new ro distilling. The heat was too much and I got a cloudy output. Should I distill again? Do I need to add more water before I start again? What should be the temperature of the water in my recycling bucket for cooling? In 3 mins to water become hot and I have to replace...please help

      A cloudy output will usually come from one of 2 things: a puke or tails. A puke would be when foam forms inside your still and boils over into the distilate. If it's from tails then you have started to collect oils from whatever you are distilling. The good news is that both are fixed by re--distilling. In the case of tails though, watch that you don't pour those tails into your hearts when the hearts are done.

      @@thm72 thank you so much. I will re distill. I use a recycling bucket to save water but it is a tiring process changing water to cool it down. I am thinking of hooking it to the tap...any other suggestions? The water in the bucket becomes hot nearly immediately

      @@themusiccovenant Use multiple buckets & switch them out. Or freeze multiple gallon or half gallon jugs (apple juice from grocery store are thick walled & last a while) to cool your condenser water.

      @@themusiccovenant I moved to hooking up to the tap, way better than a pump in a bucket. I do live in an area with no water bill though, and it does use a lot of water that way. the cooling is much more consistent though.

      It is LEGAL to distill for personal consumption in Massachusetts. But ILLEGAL on the federal level.
      Same goes for Marijuana. Legal in Massachusetts to grow & buy. But ILLEGAL on the federal level.

    I don't have to travel outside the USA to do some outlaw shit and give great tattoos but what i can't do is brew things like this then go buy guiness and drink it on camera and be afraid of breking the law breaking the law. lol I dropped out of high school and do drugs and i'm out of drugs unfortunately which is why i home brew and self sufficient and an American
