    Just wanted to add in regards to amount of probiotic strains in kefir: store bought kefir is most likely made from kefir starter, which is not kefir grains. It's made in a lab and can create kefir, but does not have nearly as many probiotics. Homemade kefir on the other hand has much more (as mentioned) because it's made from grains. Important to note.

      My kefir is not multiplying and curd separated from the water. And the grains are floating on top. Does it mean they are dead?

      I am here because I saw Dr. Berg share how important Kefir is for digestion, and mood. He did mention to avoid the flavored store bought varieties due to the pasteurization, and more importantly high sugar content. He further recommended plain, organic Kefir. I then read someone’s comment that here in the U.S. he stated that Kroger Organic kefir gave him good results including an improved mood. I rarely shop at Kroger, but I might try it out while I research and order the Kefir grains I need to make my own.

      ​@@nighinaikromirealtor no If air is trapped inside the grain, they will float which is not an issue....If water seperates, it means the kefir is over fermenting... The food is not enough...your grain are not dead if grains are big size or big quantity they will flow on top u can Google it same happened with me i was thinking same

    Try make pancakes with Kefir milk. Its heavenly 🙂 im a dairyfarmer so i got plenty of acess to raw delicious milk
    Edit: we usually pick wild blueberries and wild cloudberris that we use on the pancakes along with some sugar.

      provenxreaperx do you happen to know if the fermentation takes care of possible bad bacteria in raw milk? I know best case is the milk is clean and perfect to begin with but just in case I was wondering if the warm temperatures could help bad stuff grow just as well???

      @@Finn959 There are not bad bacteria in our milk. it get cooled down to 3,7 degrees celsius as fast as possible to keep bacteria from forming.
      minding hygene when milking like washing the udder clean and handling the milk is also important. also here in Norway we never use antibiotics to supplement the cattle feed to keep animals healthy. so less antibiotics, great care, clean barn, space, outdoor grassing in the summer etc are also contribituting to Norway have the the most healthy cows and the lowest amount of antibiotics of any other country in the world.

    @Tara, I started drinking Kefir over a year ago. Kefir has helped me overcome Hypothyroidism, and stay cancer free. I LOVE IT SO MUCH! I have not taken any medications of any kind since January 1, 2016. Now, one year later, I am sharing Kefir grains with friends and family as well as teaching people how to make cultured/fermented foods.
    I have been meaning to come on here to thank you for your video on how to make Kefir, yours is the best I have found. Often people ask me to make/post a video on how to make Kefir but all I do is share yours. So, if you have over 600,000 views it's probably because I've shared it about that many times! =D

      Ive just started my first batch 27/10/2023, its only 7 hrs 30 mins in the cupboard, im kinda looking forward to the final result, hope ive done it right🤔 my grains are small at the moment, only about 10g...see how it goes, keep on sharing 😉👍

      I also have hashimoto's, but I'm casein intolerant. I don't eat any dairy but this raw milk kefir, which I just started about a week ago.Did you have any dairy issues before?
      I also have celiac. I was told, and even read, about hashimoto's and gluten/dairy allergies or intolerances.

      @@saints82 Sure, no problem. You see, the logical consequence here is to 'shut off' their oxygen & food supply, so that they can now run around inside the container to feed off of any new food laying around (lemon, lime, orange, or banana peel, grape, strawberry, or vanilla bean, etc.).
      What this does is increases the nutrients and the vitamins and the probiotics in any added fruits or vegetables. But.. most important is to remember a little goes a long way. Only the smallest amount needs to be locked in there with these guys. You can literally add anything to the jar. E.g., a quart jar only needs 1-2 grapes, or a thinly sliced orange, or just 2 small slivers of lemon peel, etc.
      The 2nd ferment of the Kefir also has a lot to do with enzyme increase too. Either way, you can't really mess it up or make a mistake. Anything you add (in the smallest amounts) is only a new food source that the little guys will happily feed on in the fridge while they are waiting for you to eat the Kefir.
      Time is not too important. I've kept my 2nd ferments in the fridge for as long as 10 days. The 2nd ferment also gets rid of an amount of sourness (which I actually like) so if you wait a week or 2 on the 2nd ferment to drink, the sourness returns a bit (because they have exhausted their new food source).
      I'm sure - after rereading this/my post, that you are now better educated and will have no problems from here on out. :)

    11/11/2023 im in the process of making my 4th 2L batch of milk kefir, my grains have grown, my kefir is now a yoghurt consistency and it has a fizz to it, i ferment between 24-30hrs then decant into a 2L bottle and put in my fridge, i repeat when ive got about 500ml left, taste is delicious, very refreshing, guts feel a bit better for it, i drink aprox 300ml on an empty stomach and same again 30 mins before sleep, IBS/IBD has settled a little, caae of see how it goes, have a blessed day all👍

    I've been making kefir for about 15 years and I have to applaud your video skills and thank you for sharing this. This is the best,most informative video I've ever seen on kefir and you do everything very well. On a side note I can tell you know what you're talking about from the beginning just because you can pronounce the stuff. You don't know how many times I've been corrected by someone thinking my "kuh-feer" should "kee-fuhr" which makes me giggle. "keh-feer" is cool too. :)
    It's such a wonderful thing and thanks for spreading it in a positive way.

    You can also freeze the grains to store them as well. I visited my aunt in Puerto Rico and brought some frozen over on the plane (to Texas). There’re working out pretty good.

      We have nigerian dwarf goats, which make a really creamy goat milk. They recently had kids and we milked them, and our dogs absolutely loved getting a little dish of fresh goat milk.

      +Ash Smith I don't see a reason to ever seal the jar. The only instance I know of where you want to seal during a ferment is when making something like homemade root beer. And you want to seal it to give it carbonation.

    Your video is perfect. Three years ago I started making my own kefir and was only given a 5 minute tutorial on what to do. So to TH-cam I went. Your video was about the 5th or 6th one I watched and I remember thinking, "Thank God! Finally someone with a video that is easy to understand."
    This last summer my grains took off like crazy and I ended up with almost a half gallon of grains. Yikes! Posted them on Craigslist for free and have been giving away grains to 1 - 2 people a week ever since. They are all newbies like I was and after a 20 minutes lesson, I refer them to your video for a refresher and more detailed information.
    Thank you taking the time to make this video. You are my hero.

    After years of me lecturing, my dad with IBS (umbrella term these days for when docs don't know what the hell is going on lol) he finally started taking it. He is now off ALL meds for his IBS and diverticulitis. Amazing! I love it in smoothies because the taste for me is too strong.

    Hi Tara. The video is still relavent today. The content, the audio clarity, the camera perfection, everything feels like a video of today.
    I wish you syart again. Almost everything about kefor os doscussed in this video. I like the last point you told that we can store them immersed in milk in the fridge when we go on vacation. Because we might not make kefir all the time.

      2. Sometimes l notice that my grains which have been sitting in the jar 2 wks when opened look a white furry or a little fine white grainy almost like a mild. Doesn't smell off. It just concerns me. I scrape of the top layer, strain & it seems ok when fermented. I'd love to hear your thoughts on this, many thanks & God bless you☘ Sandra

    I'm making this. After spending a fortune on protein powders to try to develop more muscle naturally, it didn't work. But, 3 weeks into making kefir, until I get the curds and whey, ice noticed a big difference in my muscle definition. Apart from that, this stuff is beginning to heal my bad hip and ischial bursitis. Absolutely ridiculously good for you. Please drink this!

    Well done video!! I too believe kefir has saved me from life with crohns. I store bought dairy kefir.. which is good but expensive. Then i found out about water kefir and have been making that for about 6 months. I absolutely love it. But am now ready to take on both water kefir and dairy. My whole family loves it. And has done wonders for everyone

    Excellent guide to kefir. A friend at work gave me some kefir, stored in milk at fridge temperature. To start from here, am I right in saying take it out of the fridge for 24 hours to ferment, strain it, and put the strained kefir back in the fridge to cool? (I can’t drink it at room temperature). I will add this to my smoothies. Then use the strained graines to the same jar and ferment again. I’ve read many guides that start from new grains at room temperature. I’m starting new from fridge temperature milk and grains. Many thanks for this. (I love the perpetual nature of kefir that draws me to the wonderful nature of the kefir making process).

    Davina Theriaque, (not sure why I have no reply option for you) but to answer your question, I said "leech" metals. It's sometimes believed that the kefir will pull metal from utensils or bowls into the beverage. This has been debated among experts so some choose to use plastic or mesh strainers.

      I'm sure the milk kefir briefly touching something metal, including a blender, is fine. But if someone wants to take extra precaution, they can simply shake it in the jar. Also, my blender does not contain BPA. If you don't care for the video or the information, why bother even commenting??

      Tara Rosas Great video Tara, I love it. I have a question though, why isn't my kefir thickening like yours? Everything else goes as smoothly as in your video but when I strain it it just isn't all that thick. I don't think there is anything wrong with my grains, the taste and smell are there, but the thickness is lacking. Also, my culture is growing out of control. Wish I could share it with you people.

    At one time, I was using raw goat milk, which worked very well. I don't remember it having that distinctive flavor that goat cheese has, though.
    I've also used the grains to make apple cider and bread. For bread, I'd use the yeast from the bottom of the cider bottle. Once I've used some grains outside of milk, I wouldn't use them with milk again.

      I know this is an old video but i am hoping you will see my question! I want to use raw goats milk, however the instructions i got with my grain said not to even use raw milk when starting my grains. It said i could switch to it after, but I should use regular, pasteurized whole milk to start them with.
      It sounds like you started your grains in the raw goats milk and it workedfine?

    If you heat the raw milk to 88 degrees and then mix in room temp grains it will ferment much faster. 5-12 hours. You can get raw milk in all states, some is just sold for pets only. It’s still fine. I get it straight from the farm and it’s labeled for pets only. It’s delicious.

    I used this video to make raw goat milk kefir almost 3 years ago, and I cured my hypothyroid in one month drinking the kefir and doing the Whole 30 diet. It hasn't returned. Excellent video.

I think as long as it's fresh milk right from the source, it's probably better than store bought milk. But organic store milk probably is better than store bought kefir if you make it yourself. Do you have hypothyroid or just encouraged by the success story? The Whole 30 diet was a major component as well.

      I’m interested for my husband who is consuming kefir as a new element in his diet but I’m trying to make it at home instead. He does not have hyperthyroid, no.
      He prefers goat 🐐 or sheep 🐑 milk so I was wondering if I could use the same method of the video but substitute the raw cow 🐄 milk with other milks.

      It's tightened to suffocate the grains from oxygen. It's unnecessary if you just continue on for a 36-hour or 48-hour ferment and store the Kefir in the fridge after straining.

    Great video about making kefir. One thing I wanted to add though.....All milk bought from the store is free from antibiotics. Milk gets tested multiple times before getting to the milk plant. Milk from a dairy get put down the drain if there is a trace of antibiotics.

    I have watched many Kefir Videos. This is probably the best one I have seen. You did a great job of not only explaining all of the important facts about Kefir but you did a great job of showing how to make homemade Kefir. The only thing I think that was left out was the history of Kefir. But besides that, this was an awesome awesome video.

I had to restrain myself in order to stay mindful of the time; keeping it short and easy to digest.     This is the best video I’ve seen on the process. I just started drinking raw kefir and want to start making my own. How much do you drink a day. Currently I am doing one cup but have a lot of healing I need to go through

      All of the oldest documented studies from as early as 1908 show that about a litre a day suffice to bring about major changes in a multitude of ailments. So, about a quart-ish daily. Start small, maybe 16 oz. People have felt results in as little as 3 days, most notably in a week or so of drinking it on an empty stomach 1st thing in the morning.

    I found out about Kefir recently when i was looking for something really powerfull and natural to help me recover after surgery and 12 days of strong antibiotics, so i've started making it and i hope it will help me heal myself.       hey guys, I've just rewatched this video for some reason and saw the comments. So i just want to let you know that it's been superb for my gut health! Combined with water Kefir it helped me greatly with my gut. Digestion and immune system are better than even before surgery and antibiotics. I let it ferment for 48 hours cause i like the stronger and more sour Kefir. I strongly recommend it! :)

    Excellent information and the quality of your video is amazing (Very professional). I have RA and am a newbie to the GAPS diet. I am LOVING Kefir (A family is blessing me with organic, grass fed Goat Milk).....Ours turns out a bit thin though. We are going to use a couple of your tips though. Thank you for sharing this info. I'm going to be doing regular videos on all of the techniques that I've been using for my RA. I've spent a few days with my kefir techniques and I've been able to get it thicker and approaching sparkling by: Putting about 4+ tablespoons (!!) of grains @ the bottom of a half gallon mason jar, covering the grains with existing kefir, then pour the goats milk over that. Then I just rest the lid on the bottle, let it sit covered for 18 hours, strain it, then pour the Kefir back in....Screw the lid on tight, cover it again in the cabinet and let it sit for 6 to 7 hours before putting it in the fridge. Then I'll wait at least 12 hours before I drink it. It's turning out much thicker and, like I said, maybe slightly sparkly. THANK YOU for your video.....It was my launching pad and this newbie is loving the whole process of making, what I consider, to be my medicine.
