Dear Gail, you are an inspiration for me❤. I'm also 56 but I still have about 20 kg overweight (thanks to Corona Lock Down and no sports from one to the other day - and also too much unhealthy food and alcohol). It is much easier to increase weight than to get rid of some kilos. I eat plantbased for about 10 years now but with lots of convenience food like vegan sausage, cheese etc. I will try to eat more fresh food to lose weight and also reduce to two meals a day. By the way, your Risotto looks delicious😋. I often cook Risotto (it's so quick and easy), also with peas, of course with garlic, herbs and some dry tomatoes. I will try this lemon Risotto next time. I’m exactly the same as you except I’m 71 but about 28lbs overweight and eating processed vegan food although I do eat meat sometimes and I find this girl so inspirational actually the last 3 days I’ve been following her recipes and feeling better already It’s a pity there’s not some weekly communication to see how people are doing….
@FiftySister wish that worked for me. I also IF and stopped at 16 kb loss. 2 MAD. clean eating. cook most myself. avoiding carbs and sugars and alcohol. scale is stuck. exercise alot too. good for you. you look fabulous.

Put saffron at the end. Saffron does not like to be cooked and loses all his properties with the heat

how do you stay slim while eating carbs in risotto?
I don’t count carbs or calories. I only eat 2 meals per day. Lots of veggies keeps me feeling full.
