'You are right about food-we cant fathom eating animals and sea creatures and find it repulsive. I do like how they cook veggies-probably maintain the goodness-however their spices do not taste as amazing as Indian variety of spice and food-mainly salt no matter what-but I do appreciate the western chinese food-normal food with curried like Indian spices because the westerners like cooked spices and that is why Indian is the fav. I love Thai food as well-curried gravies but veggies cooked lightly. Indian food is appreciated the best worldwide though., followed by Chinese and Thai then Japanese and then Korean.

Di Bamboo shoot is a very important ingredient in our Arunachal Pradesh we use farmented bamboo shoots everytime when we cooked our traditional cuisines we use in green veggies and when we cook non veg and every local residents will have farmented Bamboo shoot here in their house aur toh smell se hi humari appetite jaag jati hai haha 😃

You are right about the over cooking the the vegetable in Indian food.Actually it's not always the case.After coming the gas the pblm is started.When ppl in India used to cook in in culha they have to cooked quickly otherwise the falme in the culha would had stopped but things changed after coming the gas.It's reduced the the benefits of the vegetables & become one of a major reason for reduction of quality food in India. When I eat in a temple or any ashram I can feel the crunchyness in vegetables. Even those temples & asram foods have crunchy vegetables, lower quantity of spice, no garlic & no onion they tase delicious as they still reatain orginal methods of Indian cooking.
