You should play a game of skate where the board is upside down on the trucks so the nose and tail curve downwards. You could also apply grip tape to the bottom (the side that faces up) if your feeling nice.
If you can get Nigel to agree to do this again (this concept, different wheels), instead of wheel-bite being an issue, why not just cut out a correspondingly sized chunk of the board? Eliminate one problem, while creating another! What could go wrong? Edit: clarification (" ")

yup, tried it back in the 90s and works just fine. ur just super high up on the board, but most def its possible. plus i took the biggest vert in europe at the time on the board ahahaha, was pretty scary but hey i did it ahaha, oh yeah and it was tried with both aggressive skate wheels and normal inlinewheels and side by side

What if you tried mounting the trucks rotated 90 degrees so you have to ride the board sideways? Maybe you can fit three or four trucks if two trucks is too hard to balance on?
I know how hard that is to skate well kinda. I put my OJ thunderjuice wheels on my popsicle deck and it was nearly impossible for me to do tricks. I did it just to try it. This video was awesome and instead of the big orange wheel. I would recommend swapping it with a wheel much more smaller. Like a 60mm instead of a 101mm
