      I use an ice cream scooper to scoop it out or a watermellon baller if I can't find my ice cream scooper. No fingers necessary to get off the spoon.

      Chef John, first of all please allow me to give you praise for all you do.
      Sweet potatoes. I’ve been studying them for a bit. Most folk think sweet potato pie and so forth. But let’s take a look at southern soul food. Most black folk will include sweet potato when cooking fatty foods like raccoon. It’s equally effective with pork. Something about it. It lends well with fatty meats. Recently I marinated some sweet potatoes to roast in a large ziplock. Afterwards I used the same ziplock to marinade some mushrooms. The mushrooms were phenomenal. I later tried to use the same marinade for mushrooms sans the orange juice from the sweet potatoes. While they were good they weren’t quite as good. What is it about the addition of sweet potatoes to dishes? Do you have any insight?

    I was so inspired by this recipe that I decided to make this for dinner. However, I made one slight adjustment to the recipe by substituting all the ingredients for a bag of Doritos. It was great. Thanks John.

      Very true....Many can't tell the difference between a sweet potato and a yam. I'm one of those weirdos (😀) that can. I'm on board with your statement above. Still, it is yam/ sweet tater season, and that looks nummy, and like fun.

    It's so, so nice to see savory recipes for sweet potatoes. Like many growing up, my only experience with sweet potatoes was the dreaded and thrice-accursed candied sweet potato served at Thanksgiving. Truly, an affront to all the senses. But when I grew up, and started cooking for myself, I got to try my hand at properly making sweet potatoes, and now I love them. Just keep those candied monstrosities away from me.

    There's a famous family lore story on my dad's side of the family. My dad and his siblings (and most of their kids) *hate* sweet potatoes. So, one Thanksgiving, when they were kids, their mom (my grandma) wanted to make them eat sweet potatoes. My dad (about 6 at the time) was sitting next to her at the table, so she passed the sweet potatoes to him first. Once he got a good whiff of them, he got sick and barfed on the whole dish of sweet potatoes. Then, his brother and sisters cheered because he had freed them all from the horror of having to choke down sweet potatoes. After that, their mom (my grandma) never cooked sweet potatoes again. To this day (dad is 62) we still never have sweet potatoes when we have Thanksgiving with his side of the family.

    I had no bacon. Only tri tip from beef dip leftover. It actually works. I sautéed the shredded tri tip on my cast iron skillet with green onions and followed the recipe from there on out. Family loved it. I’m beginning to think sweet potatoes work for a lot of potato recipes. Thanks Chef!

    I just made these, and I have to say. These are, hands down, the best sweet potatoes I have ever had. I substituted green onions with regular onion and sharp cheddar with feta cheese and it was just AMAZING. Sidenote. Your Ziti recipe is the BOMB!

    Thank you, Chef John for a savory sweet potato recipe that looks absolutely delicious. I don't really care for sweet potatoes that are made more sweet with marshmallows or sugared pecans. So, it's nice to have more savory options.

    I have been meaning to try these and today I finally made this recipe.
    They turned out delicious. You'd think the sweetness wouldn't mingle, but it mellows with the bacon, cheese, and pepper. I served it with grilled pork chops with a soy maple sauce and the wife loved it. Big hit!

    I just roasted some sweet potatoes to make sweet potato pies and a few extra roasted separately with whole garlic cloves as a savory side to go with Portuguese chourico and peppers w onions. So good. Normally you’d eat chourico and peppers in a bread roll but I wanted the option of a naturally sweet savory side dish. It’s so good.

    I made these, but I messed up scooping out the potato shell, so I ended up putting it in a small casserole dish, and it was absolutely incredible. Impressive and good enough for company. Delicious combination of flavors.

    I'm so proud of my twice baked sweet potatoes. I use herbed goat cheese instead of cheese/creme fraiche, and a mix of Hungarian and smoked paprika. The other ingredients are the same as your recipe and--my God-- it is just amazing.

    In Egypt, we always eat sweet potato as a dessert, no one ever ate it salty, we add honey to baked sweet potatoes, mash them together after removing the skin and enjoy the puree!

    I made this for dinner tonight and it was awesome!! Only ingredient i forgot to buy was the lime, so i used lemons instead, it worked great. After all, i'm the Matt Damon of my lemons.

    Yummy. Reminds me of a stuffed kumera I used to get in NZ. Kumera is like a cross between a yam and a potato. Here at home I would mix equal parts of red yams and russet to make a facsimile but you don’t get those pretty stuffed potatoes. Theirs also have sautéed mushrooms green pepper red pepper and topped with a slice of brie. I turn into a casserole and top with brie.

    Chef John! If you're looking for an interesting Southern dish, you should really try making chicken bog! It sounds weird, but it's so delicious. It's a dish native to coastal South Carolina, so a lot of people haven't heard of it before.

    Hey Chef! This is my first time commenting, so I’d like to start off by saying I love your videos! I definitely check your channel first before I make anything new. This is sooo close to a recipe I developed last year. Aside from the lime, the only real difference is that I used pickled jalapeños and added bit of sriracha. I do love the addition of the citrus though! It’s reassuring to feel like I have similar taste to a chef that I look up to so much lol. Thanks for being such an inspiration and continually putting out great content!

    I just made these, and they’re delicious! I will definitely make these again come Thanksgiving - it’s perfect because you can make these ahead right up to the point of the second bake, and heat them up as the turkey is resting. Also, I’ve always disliked that classic marshmallow studded sweet potato casserole thing, and this is basically the antithesis of that. Thanks for another great recipe, Chef John. 😁

    Never tried this with sweet potatoes before. Have done stuffed potatoes plenty of times though, with mushroom bacon and cream cheese being a firm favourite. Will give these a go if i can get a hold of some decent sized sweet potatoes.

    I have to agree, most sweet potato recipes are way to sweet, then that horrible thing when the melt marshmallow and brown sugar, UGHH. Savory sweet potatoes are a treasure, and I'm gonna give yours a shot. Never had a recipe with lime juice, that I'm really looking forward to.

    I ran a small dinning facility in the army and my guys would forget to poke the potatoes once in a while and we almost always had potatoes explode, you don't ever want this mess

    Just made it. Messed up the skins so I baked it in a casserole dish. Holy crap this is so good. I/we love this one. Definitely making this for Thanksgiving.

    I grew up on syrupy, marshmallow-topped "candied" sweet potatoes -- usually starting with the canned ones, which made it even worse! -- which made me think I hated sweet potatoes. Then I discovered more savory treatments like this, and discovered that I absolutely love them! Unfortunately, the rest of my family still prefers the gloppy, syrupy way to make them, so I'm the only one who would enjoy this recipe. But it looks so great to me, I may tell them all to just go eat some dessert, and make them anyway!
