‘Not-So Traditional’ Bread Pudding | Caramel Coated Croutons Pudding

  • The object of life is to learn- learn for as long as you live. There’s nothing wrong with the traditional Bread Pudding. But, there’s nothing wrong in revamping it a little either! I’ve created a Not-So-Traditional Bread Pudding that you must try especially if you’re a humble bread pudding devotee. There’s an added richness from the butter-toasted bread and the depth of flavour from the caramel is just extra warm and comforting🥰 The proof is in the Pudding!
    BACKSTORY FOR THIS RECIPE: For some reason, I was obsessed with finding a crunch element to my bread pudding. I loved its smoothness, softness and simpleness but I wanted to explore a method that would allow the bread to show up as ‘crisp’ in spite of being soaked in a custard. A paradoxical recipe, if I may say so. I thought long and hard, experimented many times, and discovered this caramel-coated-croutons technique and it proved awesome! Of course, the crispness doesn’t last forever, but the flavour and the texture this technique contributes is beautiful to say the least. Ask me why I love cooking- I’ll cook up my million reasons :)

    Ingredients:
    400 ml Milk
    3 Tablespoons granulated Sugar (Adjustable)
    4 Whole Eggs, room temperature
    A pinch of Salt
    1 teaspoon Vanilla essence
    1/4 (upto 1/2) teaspoon Cinnamon Powder
    8-10 Bread slices (stale bread)
    2 Tablespoons Salted Butter
    4 Tablespoons Sugar + 2 Tablespoons Water for caramel
    Butter/Oil for greasing the baking dish
    Tips:
    * You may use non-dairy milk if you’re lactose intolerant. You’ll also have to use an appropriate substitute for butter.
    * Traditional bread Pudding recipes suggest using stale bread, i.e., bread that is about 2-3 days old with no mould growing. It was meant to be a no-waste recipe. Also, it gives the pudding a better bite than fresh, soft bread.
    * Use sufficient bread to fill up your baking dish. Although I used around 8-10 slices, you may use more.

    Hello Florency. I mentioned it to you before you are good with the idea of browning of the bread in butter I was putting the butter whilst mixing it with the milk and eggs now I will do it your way. Thank you.
