Pediatrics are a unique challenge. Disease processes, injuries, treatment options, etc can be different than adults. The scene around an injured/ill child can be chaotic, with the parents/family (and even bystanders) in a panicked frenzy. Pediatric emergencies are low frequency, high risk events.

I was taught a few years ago to cover the burn injury with a moist dressing to prevent it from sticking to the injury. Why would is that being changed to dry dressing?

bacteria and other microorganisms are more likely to gather around moist environments the aqueous environment facilitates cellular processes. This increases the risk for infection, so it's best if the dressing is dry and sterile.
