Country Fried Steak - The Hillbilly Kitchen

- Strap your bib on and prepare to sling some gravy around the kitchen table because you can't eat this Country Fried Steak in a civilized manner. Anytime I cook this for Bret, he tears into it like a wolf with a mouthful of wisdom teeth.
This steak is tender, yet crispy around the edges. It's not greasy or gristly. You won't need a knife to slice it either. You can easily cut it with a fork which means you can attack it double fisted, with a fork in each hand.
Ingredients:
1 1/4 pound - Ground round (Lean)
1/2 to 1 cup - Flour (Any kind)
1/4 to 1/3 cup - Ground flax seed
2 cups - Milk
Salt
Pepper
Onion powder

The Food Network could use some shows like yours. Cooking like people really cook not all that fancy stuff with ingredients nobody ever has or has ever heard of. Thanks for the memories of the way my mom always cooked!
The food network is so underclass compared to the Hillbilly Kitchen. Itcaters to the down home folks. Ive used several of this ladies recipe.
I like her recipes but I love the Food Network. What do you mean nobody ever has those ingredients? Just because you don’t, do you think an entire network would exist if nobody was eating that food? This is a big wide world with all kinds of people in it, eating all kinds of things.
My family growing up was very close! We had wonderful Christian parents and we were in the Baptist Church we went to as often as possible. We ate supper together every night. After supper we stayed at the table so dad could read our devotions from the Bible. We had an idyllic childhood. There were six of us, but one of my brothers died when he was 18 months old by accidentally hanging himself in the wooden highchair while dad prayed with us. Mom was at grandmas. We moved to a different house. All of us kids are still close. Mom and dad are in Heaven. I really enjoy your cooking lessons and spiritual lessons Becky!! You are my kind of friend and Christian sister!! Thank you for everything you are doing to further God’s Kingdom!!! BLESSINGS ON YOU AND YOUR FAMILY!!!

This is closer to being salisbury steak than country fried steak. Salisbury steak, and hamburger steak are pretty much the same thing, i.e. they both use ground meat. Country fried steak is cubed steak, floured and fried.

Trick to moist and flavorful meatloaf is to mix ground beef and ground pork. Adding dry onion soup mix also adds character. Just sharing. And greetings to you from our home in Florida.

I learned to cook by watching my mom. She was an excellent cook. I can only imagine she learned from her mother. Both of which grew up in the boondocks of central Alabama. I cook as my mom cooked, and she never used milk in making gravy, nor did she ever put the flour in the pan to soak up the drippings. She would always loosen the drippings first, then mix about a tablespoon of flour in a cup of hot water, stirring til the flour was no longer lumpy, then add that to the pan, stirring constantly, adding more water if needed. Seasoned it with salt and pepper. But the gravy was always very tasty, brown and had a rich flavor to it. I do the same, especially when I cook a rump roast, which I always cook by braising it on top of the stove, never in an oven. It always comes out very tender, leaving lots of rich dark brown drippings that I make the gravy with, using the same method that my mom used. I'm not saying your way is wrong, or that my mom's way was wrong. It's up to everyone's taste on how they prepare their food. I'm just wondering if anyone else does it the way my mom and me do it.
If I happen to ask my son what he wants for supper......he always answers hamburger steaks......but what he means is chicken fried hamburger steaks.....I flour mine first....then dip it in egg and milk and then back into the flour.....it makes a wonderful crusty outer layer....we love them. This looks so good. I have always heard called ground meat cooked this way “hamburger steak”, and country fried steak was made with cube steak. Either way, it is so good.
I grew up in Louisiana and we called these hamburger steaks, breaded or plain. For cube steaks it was unbreaded. But for country fried steak it was breaded cube smothered in a white gravy.

jean massey Yeah I grew up with chicken fried steak being made with cube steak. A lot of people use ground round and it is not the same. I’m spoiled to cube steak, but I really enjoy watching her cook.
I use cubed steak but this looks more like hamburger steak that my dad loved.
Yes, this isn't country fried steak. Country fried steak is cubed steak. Ironically, I've always liked hamburger steaks better, lol.

There used to be a restaurant called po folks, my dad took their when I was younger, it had the best country fried steak I have ever eaten. I have made my own, but it didn't taste the same. I am gonna try your recipe. It looks so good.

You are a woman after my own heart. I stumbled upon your channel looking for a custard pie for my husband. Your southern cooking skills are similar to mine. I just wanted to share a secret on the corn. Two tablespoons of sugar and some milk. Drain completely. Add butter, salt, and pepper to taste. AMAZING RESULTS! Keep up the great work. I love your channel!
On the gravy I've learned to slowly add (about 3Tbs flour / 1cup cold milk) add milk to flour in a measuring cup, mixing continuously till I get a slurry about the consistency of cream, I then season my drippings, grease, margarine etc (saute onions, bullion cube, salt& pepper to taste) and let it cool some....I start adding the slurry while turning up the heat and bring to a boil... I've learned you don't always need all of the slurry and the good thing is that it can be added even at a slow boil without lumps as long as you stir constantly just as you did....I also use it to thicken other stuff including gravy like you made or to thin I mix equal parts milk and water and add the same way.... gonna try your steaks soon, never thought to use ground meat but it really looks good! Straight forward cooking , You dear lady are one of the best at this and a breath of fresh air.
Can also mix some corn starch and room temp/cool water then add that to gravy/white sauce when you add too much liquid. Mix well with the whisk and keep cooking.
Yeah, you can use the leftover to put up wallpaper.

I love the simplicity of your recipes.....this is my style of eating. I only make one adjustment when trying your recipe's and that is the salt content. I use very little salt when cooking and leave it to each person to season as their own as so many of us have to be careful of salt. Thanks for the recipes!!!!

Watching you cook is like watching and listening to my sister who loved to cook. She had a degree in Home Ec and never got to teach that very much,but she was a great teacher. So are you. She passed away in '07 with breast cancer.My other sister is a great cook too.

I like the healthful addition of flax seed.
I grew up with cubed steak used for country fried steak, but tried it this way tonight. The only thing I did different was sprinkle garlic salt on with the onion powder & pepper. It's actually quite good! Thank you for sharing.

In quarantine sick w/COVID-19! I'm so over this crap! my momma turned 90 yesterday & I couldn't even be with her!! Today was supposed to be my last day but I still am sick so it's extended at least another week. 1st time I could watch videos b/c the severe dizziness has been horrible. I really could eat your chicken fried steak though!! It looks amazing. I think I've lost 20 lbs. I'm craving chicken fried steak now!! 🙃😵💜
Keep those lungs clear.I used a tea made from a plant called Mullen. My mother has fibrosis and I like to gather plants for food and medicine and I was reading about Mullen. Bottom line I drank 3 cups of tea a day for better than a week along with deep breathing
Hey Becky We always used cube steak to make the country fried steak. I like the idea of adding the flax seed to the flour to coat the meat. I never thought of using ground sirloin to make the country fried steak. I am going to give that a try.

@@janemcroberts5172 Same. I loved the Country Fried Steak I would get at old diners around the country, and they always had an internal texture like ground beef. Never liked the tough, chewy meat inside that wonderful crispy crust.

I use cubed steak to make country fried steak. I bread the cubed steak and brown it on both sides. I put the browned meat into a casserole dish. I make “poor man’s gravy” using the pan drippings & flour. Make the gravy a little thin…it will thicken up in the oven. I pour the gravy over the cubed steak and bake it for about 45 minutes at 375°-425° until meat is tender. This is how my mom made it, too. She always fixed a big pan of homemade yeast rolls to serve with it. We had vegetables from her garden year round. What we didn’t eat she would can.
I use Wondra flour to make gravy and as a general thickener. It makes "lumpless" gravy and I've been able to sprinkle small additions on the top of hot gravy that can be stirred in without making lumps.
There's only one of me. I don't bake cookies or cakes, etc. so I've found that a small can of Wondra lasts a me a long time. Much better than having 5 lbs or even 2lbs of flour sitting around for months and eventually needing to be thrown out.
Your husband and mother in law are two very lucky people to have you to cook for them.
Okay ... I've always used cubed steak . Never tried it with flax seed ... I'm definitely going to try it . I use a milk and egg soak then flour with seasoning .

When and where I was raised, this was called Hamburger Steak. I always liked it.
Around here a hamburger steak is a hamburger fried with onions. When we don't have buns we make hamburger steak 😊
Big fan of the fried steak but I have never tried a Hill Billy fried 🥩 good cooking very educational and instructional and Cleaness handling food good job ma’am.

I confused about how/why you cut up the meat that way.🤤sorry I'm so foggy. You cut the first. But then you cut the one on the left end in half....but not the one on the right end. I love to watch women cook on TH-cam. They are so efficient at it. Sometimes they take care of a baby or fry their steak while making mashed potatoes on the side and I learn new recipes.

I'm southern from North Ga. And we never had Ground Chuck as Chicken Fried Steak. We had Sirloin Steak that was tenderized. We called your meal Hamburger Steak. Sometimes cooked without flour and no gravy but sometimes with gravy. Your does look good Becky I know you are a great country cook. Thanks I enjoyed your Vlog.
There is also kitchen meat press which is called "Fast Cutlet Maker V2" that smash the meat and after it have clear squared pattern on it. It's very popular among german people.

I have to say, you threw me with this one, I’ve never made Chicken fried Steak from ground beef! I use tenderized round steak., or cube steak. Now I’m curious, so I’m going to try this!! I watched this to see what I could learn to make the chicken fried steak that I make for my husband better. Well, it turns out the way I came up with as a newlywed 40 years ago was the ways it’s done! We are both born and raised Texans and this is one of his favorite meals. Thanks for putting my mind at ease since no matter how many times he says he loves it I always wonder if there’s something I could do differently to make it “the right way.”

My momma's side of the family are true "Hillbillies" and I can tell you "flax seed" and "grape seed oil" have never been uttered from generations of lips.... but ground beef for chicken fried steak is brilliant. I chicken fry slices of my meatloaf which is somewhat similar.
I used to make this all the time for my family when the kids were younger...guess I should do it again when they visit. I would cook it with cubed round steak, cook it till almost done in Vegetable Oil, then take the steak out...make the gravy with only a small amount of remaining oil but put a teaspoon of Bacon grease in to make the gravy. Not healthy, but sure tasty. Then put the cubed steak back in the gravy for a few mins. to finish cooking. It really soaked up the gravy and made it taste even better. Of course you have to have mashed potatoes with it too. Thanks for posting all your 'down home ' recipes.

Prefer cubed pork although we do use beef on occasion. We cube pork cutlets in an old commercial Biro cuber. Would make it at the firehouse often. The crew loved it.

Country fried steak is my favorite meal. But anything with gravy is heaven. As my Mammaw use to say.
I always put liquid in my flour and mix it real good before adding it to the oil. It just make it come together quicker for me.
You did a good job teaching about cross-contamination of the meat on to the other things and this is an excellent video and learn something about the frying of and the seasoning using flaxseed I'm going to get some flaxseed and do the same as you thank you
