We cut it thinly and let it sit in lemon juice, which "cooked" the chicken and then we ground it, added salt and pepper and served it on saltines. Hahahaha....probably not the safest way to do it, but it sure was good. I also remember the peppers. We'd pick them straight from the jungle and play practical jokes on new troops and tell them they were sweet peppers and they had to eat one as an initiation, then give them water to wash it down (worst thing you can do is give water instead of milk!) Good times in Guam....love that island so much.

Except I have family ship lemon powder to me from the island. More concentrated than lemon. We look about the same age. Now I'm curious if we went to school together at some point

I made Your recipe in a smaller quantity and I used the Tysons grilled chicken ( I cheated) but it came out very good and I WILL be grilling my chicken next time as I like the flavor of dark meat better . Your recipe is awesome ---Thank You !
my parents were missionaries in Micronesia and we ate this all the time. The beef kind is really good too. The only difference we had was the addition of ginger and lime juice instead of lemons but this brought back lots of memories. Thanks for the video.

What a great recipe... There aren't too many grilled chicken dishes that I haven't tried, but this is one of them. I'm going to give this a try, but I think due to the heat, I'll be the only one in the house that will eat it. Also need to swing by the Pinoy Grill in Mira Mesa and see if they serve this up! You can find Chicken Kelaguen, Finadeni and other Chamorro foods from Guam at Chamorro Grill in San Diego. It's not a dish from the Philippines so you wont find it at Pinoy places.

Wow, nice job. I’m from Guam and that was pretty much authentic - how it’s done! Besides the fact that the peppers you used weren’t picked off of a wild boonie pepper bush on the side road down in Merizo, that was ON POINT! And even though you didn’t have a kamyu to shred the coconut, that was some skillful grating. I also like that you served it with rice and fina’dene’. I prefer rice over titiyas (Chamorro-style tortillas). By the way, you can call me Chamorro, Chamoru, or Chamorran. It personally makes me “no nevermind”... Because of our history as a Spanish colony and American “possession” and being near lots of Asian and Pacific people groups, our Chamorro language has a lot of borrowed words anyway. GREAT job on the chicken kelaguen!
Good job. I dont put finadenne on kelaguen lol. Put it on the rice 😁 I hate when people make chicken kelaguen without coconut. That's just lemon chicken salad without the coconut in there. Btw, it's ok to thoroughly grill the chicken to be safe. Wrap in flour or corn tortilla and saran wrap it for a to go snack
Definitely looks like a killer. Smebody showed a unique idea for shelling coconut. Freeze the nut. Take out of freezer and just whack the snot out of the shell, and the intact frozen coconut meat stays intact. Then you can cold grate the meat.
That's how we eat it...we don't use store bought. Get a brown coconut on the ground, husk it, crack it open, grate it on the "stool w/spike like spoon"(kamzu)...little bit of brown didn't hurt anyone.

Ou, heads up never put lemon and chicken into a stainless bowl. Glass is better. Something bout it causes it to spoil fast.
