Millionaires Shortbread also known as Caramel Shortbread

  • In this video I show you how I make this classic pastry, Millionaires Shortbread. It has a delicious all butter shortbread base topped with a layer of scrumptious caramel and finished with a coating of chocolate.
    RECIPE
    Note in the video I put the wrong oven temp on the screen it should read as I said in the video 160ºc for about 30 minutes.
    Millionaires Shortbread
    125g white sugar
    250g unsaltesd butter
    375g plain flour (NOT self-raising)
    Good pinch of salt (if you use salted butter omit this)
    For the caramel
    100g butter salted
    100 sugar any type (NOT powdered)
    397g tin Condensed Milk (NOT evaporated milk)
    200g Chocolate for topping

      @@MrPaulsPantry I love your channel. But for different reasons I could describe.
      I like that you focus on traditional English dishes as I'm a brit who left the UK for Germany and miss traditional British food.
      Also I like how you describe the steps in an easy to understand way. Like when you made over cream you didn't just say whip to soft peaks but demonstrated exactly what soft peaks were by picking the dream up and letting it flop.
      I've made the mistake of thinking it looked soft in the past. When it was actually soft. And so I had the cream and cheese flop (it was for cheesecake)
      Btw you should do a cheesecake

    Shortbread is my weakness, and my kids know that it's the one treat that is off limits!, that being said, I always make extra because even though it is off limits it seems to magically disappear anyway!
    This recipe will put the treat over the top!

    I have a very similar recipe to this, the only real differance is that I add 2 tablespoons of golden syrup to the caramel and boil/heat the caramel sauce to 235 - 238f to ensure a good firmness when cooled. Decadence at it's finess.

      @@MrPaulsPantry since you are diabetic have you given any thought to having both the traditional recipe+video and then a separate Paul’s diabetic friendly version recipe+video?
      I can see a problem making caramel with sweetener like Stevia but I’m sure some of the Keto dessert videos I’ve stumbled across have some alternatives we might be able to purloin.

    Mr Paul, This is delicious! I intend to make it often. I wondered if you remembered the old fashioned Nutty Brittle we use to buy in the sweetie shops back in the day? Also the Candy Apples our mums used to made at Halloween. It was a clear candy and I think my mum used water instead of milk. I would love you to post a recipe for this if you have one.     Yours looks the best Millionaires cake I have ever seen. Strangely enough this week I purchased one of those size pieces for £2.50 here in the UK - expensive!
    Has I am a lover of anything coffee (although I don't like to drink coffee unless it has a shot of Tia Maria and cream on top - only as a special treat of course) I'm wondering Mr Paul if it could be made using coffee maybe in the caramel or in the shortbread?     Is there a place where I can get this recipe and your others in cups? I am in Alaska and we so not have scales for the kitchen. I think I would like to make tis for Christmas. Also would like to make Christmas cake with candied fruit.

      Unfortunately not Kris. I and the rest of the world use grams. with the exception of the US. Treat yourself to a digital scale (about $10) Cups are the worst method of measuring ever. I've tried measuring 3 cups pf flour then weighing them and each one was different. Even bakers shops where you live don't use cups. I have Christmas cake recipe on my website.     I actually have some of these in the fridge right now. I make them every couple of weeks because they’re so easy but look impressive ☺️ Do you have any tips on storage? They’re in the fridge right now because it’s been very warm here and the top melts but if I put them in the fridge, even in an airtight container, the shortbread goes soft.

      Hi Alexis, unfortunately, the moisture comes from the caramel, nothing to do with being in the fridge. The only advice is to eat them quickly lol . During my filming my kitchen reached 43ºC

    Is there any reason why some recipes add golden syrup to the caramel?

      Yes, by adding any kind of Invert Sugar which Golden Syrup is one, it makes sure your caramel does not crystalize. Thanks for subscribing.

    What made you decide to move to Spain?

      My late wife and I had a house in Morocco since 1983 and we purchased a studio flat in Spain to break the journey down to morocco from the UK. We grew to like Spain, its culture and cuisine so 25 years ago we decided to move here and open a guesthouse offering cookery courses. Although it had reasonable success it was boring, so we opened a bakery like we had operated in the UK offering English goods to the expat community. Sadly my wife contracted cancer and eventually I had to sell the shop to stay home to nurse her. Now I live alone in a remote mountain village near Granada with 5 rescue dogs.

    You said 160c for 20 minutes in your shortbread video.
    Here you say 160c (fan) for 30 to 40 minutes.
    It's the exact same ingredients. How can it double cooking time

      I had already made a note under the video and on my website stating I put the wrong oven temp on screen, it should be as I said in the video, 160ºC for about 30 minutes. It does take longer to cook as it's thicker than the shortbread fingers. I apologise for the confusion, I myself never use a fan oven and because it caused problems I decided to only state Non Fan temps.

      @@MrPaulsPantry oh right. So I'll try doing it a bit less because I only got an air fryer. It's like fan assisted but probably more so cause it's a big fan in a small oven. I always find I have to cook things less

      Hi Dave, a few years ago I did product reviews for a marketing company and one of the things they sent me was an air fryer (I have to say they had only just come out at the time) however, I just could not get on with it at all, in fact the only thing I managed to turn out successfully were chips. I would be interested to hear how you get on with it please.

      I've already did your normal shortcake recipe. And I'm planning to try the millionaires shortcake next time which should be identical as the caramel/chocolate will be prepared on a hob anyway.
      160c for 20 minutes produced a biscuit which had a nice typical biscuit like consistency. Which snaps rather than bends Unlike some American cookie recipes I've come across which produce a softer biscuit which does indeed bend to a point.
      (Although not as hard as I would expect a Scottish shortbread biscuit like you can buy in a tin in the shops)
      Although possibly this isn't a traditional recipe and possibly contains things which harden the biscuit. Like corn starch? As I've seen variations of your recipe containing which did produce a much harder biscuit but at the time were also cooked in a normal oven. Hense my inquiries in the comment section concerning the variations in the recipe as I was trying to ascertain whether the difference in results were solely down to the cornstarch/icing sugar or just my apparatus.
      A couple of points to note. Is that air fryers very in design. Many will open from the top and contain a basket.
      But Mine opens from the front and has two wire trays where I can put my cooking on one of 3 levels.
      I preferred this design because the fan is at the top. And just like a normal oven I find that where you place the tray can effect your product. Nearer the fan/heating element will make things go brown / crisper but at the bottom the effect is lower.
      (I placed the shortcake at the bottom in a Springform tin where the sides are much higher than the shortcake)
      My thinking was that it would negate the effects of the air fryers ability to too rapidly cook the outside compared to the inside)
      It's also important to note that air fryers have evolved a lot since the first models. (As you might expect with anything)
      I simply have no room for an oven where I live but I've experimented with various recipes such as Apple crumbles, roast potatoes, roast chicken (it was a small one and used the rotisserie attachment of the oven) your shortbread recipe and various other things and I'm reasonably confident I can replicate any recipe and get results better than an oven. Bearing in mind you can expect things to cook/brown faster on the outside. But you can pretty much cancel this out altogether. Like I did with the roast chicken. Simply by wrapping it in foil.
      Then the results are identical to an oven. You just save money on the lower energy cost of only heating a small space.
      And thanks for your videos.
      I am also an expat living on Germany. So I do very much appreciate your traditional English recipes as me and the wife do miss most of these things over here. And German food is quite terrible.
