  • Kheer is an Indian sweet made with cereals, lentils or their flours. The Indian cuisine has many variations of kheer recipes. Kheer is like a pudding traditionally made with milk, sugar and some dry fruits. The choice of spices and flavorings are usually cardamom, rose water, kewra water or saffron. So you must be wondering what is rice kheer?
    Ingredients & Written Recipe :
    1 L Milk
    3 tbsp Rice
    1/3 cup Sugar
    Mix dry fruits
    1 tsp Ghee
    1 - 2 tbsp Water
    Cardamom - Nutmeg pwd
    1. Rinse rice a couple of times in fresh water and then soak in enough water for 5 - 10 minutes.
    2. Meanwhile when the rice grains are soaking, take 1-litre full-fat milk in a heavy wide pan or saucepan or kadai.
    3. Keep the pan on low to medium-low heat. Stir at intervals so that the milk does not burn at the bottom of the pan.
    4. Let the milk come to a boil.
    5. After the milk begins to boil, drain all the water from the rice and mash it then add it to the hot boiling milk.
    6. Mix very well .
    7. Simmer and cook rice on low heat. No need to cover the pan when the rice is cooking.
    8. Cook the rice grains till they are 90% done or cooked.
    9. Then add sugar . You can add raw sugar or white sugar. Mix the sugar in the milk.
    10. Continue to cook rice on medium heat. Do stir at intervals.
    11. Simmer till the rice is almost cooked
    12.Add 1 tablespoon each of sliced almonds, chopped cashews and sliced pistachios. You can blanch the almonds if you prefer or just slice them raw., i have used roasted dry fruits.You can include various other nuts according to your preferences,Mix well.
    13.Then add ½ teaspoon cardamom powder.Again mix and continue to cook till the rice kheer thickens and the rice grains have completely cooked.
    14. Switch off the heat when the rice grains are completely cooked. The kheer will also thicken. On cooling, rice kheer thickens more. Scrape milk solids from the sides of the pan and add to the kheer.
    15. You can serve the rice kheer, hot or warm or chilled. Refrigerate leftover rice kheer and use it within 1 to 2 days. You can eat it cold, or reheat it until warm.
    If the kheer has become very thick add a splash of milk and reheat.
