It isn't acappella, but you should check out So Hyang's version of O Holy Night. She's a Korean artist who does her own arrangements and has a phenomenal voice. She's a Christian so she has a lot of Gospel influences as well as putting most of today's pop divas to shame. (I may have misspelled her name but it's easy to find.)
You should definitely check out Eclipse 6 and their version of this song.. they are an a capella vocal band as well.. they are incredible.. great vid.. God bless
