probably wont like champagne the added sugar is consumed by the yeast, so its not sweeter and usually actually a little more bitter then regular wine if you want something sweet you will have the most luck with a young white wine tho its still not a guarantee, sometimes its sour instead, sometimes its still just wine flavor

Even if you make wine the exact same way they do in the region of Champagne, you can't call it Champagne if you made it outside of that region, it HAS to come from there. That's because buyers from around the world associate the region name with quality, in a sense, and that comes from those regions producing quality products for many many years. If you name your product after a region, but it doesn't really comes from it, you are profiting out of the region prestige, fooling the customer who expects one thing and gets another, and taking busines from sellers with legit profits, and that's a no no.
