If you’re looking for something else to do with ground chicken, I make buffalo chicken meatballs. 1 lb ground chicken 1/4 c bread crumbs (whatever kind you have) 1 packet ranch 1 egg I use my one inch scoop and place them on a parchment lined cooking sheet. Bake at 400 for 15 minutes. Flip them. Then bake for 10 more minutes. Then toss in franks wing sauce. We like to serve them with baked potatoes and broccoli. Makes 22-24 meatballs.

Lots of seasoning. Lipton golden onion soup mix, salt, pepper, poultry seasoning, cumin. Sautéed veggies (onion, peppers, shrooms, tiny diced carrot, celery and garlic are ones I’ve used all or whatever combo), cool and mix in the meat. Also can do any or all above plus add a pkg of stuffing (add water until it’s saturated but not runny) then add to the meat mixture. Shape into a loaf and bake. Rachel Ray recipe. I’m bad with times and don’t do temps. Been cooking 45 years. We ain’t died yet, so I must ge doing it right.

And then use the side of the knife to “mash” the garlic and salt together to form a paste like consistency. The salt acts like the grinding stone and the knife applies the pressure, just like a grinding mill. I think there are some videos on TH-cam that show more detail. Just press the knife down on the garlic and then pull the knife away from you in the same direction over and over. It sounds longer but actually it’s not. No need to dirty up another tool, and this manner breaks down the cell walls in the garlic releasing more flavor. Same thing applies to making onions into a purée and then freezing the purée in an ice cube tray. The purée has more flavor than the larger chunks. I’m saving all your recipes onto my iPad so I can just pull them up when I’m looking for something good and fast or just plain delicious!
Oh wow! Everything looks super delicious. I wanna try everything. The last one with the cream of mushroom soup, i hate mushrooms, but i can eat it in the green bean caserole. I could always pick out the mushrooms lol. Im making porkchops tomorrow, but i dont have the ingredients to make it this time. So maybe next time. 😊
I think the potato skins would be even better if you mixed some of the scooped out potatoes with the mixture. Maybe half the filling and add half the scooped out potatoes? Either way it looks gooood.
yay! We grind our own chicken meat whenever we find a sale on chicken thighs. I have made kinda like the same recipe! I like to add sweet peppers and grated carrots to my meatloaf only because it is a way to sneak in veggies! and it gives it more color too! all the recipes looked awesome! per what I always know you will show us! thanks for sharing! xoxo

I need to say- I made a version of those potato skins. I used green onion and green pepper in addition to the jalapeños. They were so good. I can't wait to make them again! Made the ramen soup last night. I used canned veggies because i already had them. Added dried shallots and the rest of the potato guts from the skins- total winner! I added turkey broth to make it more soupy. So good. Thank you for sharing!!
If you like to use garlic a lot a really good thing to get is already minced garlic. We love to use this because it also keeps for a long time as well.

Try corn husked down to just a few layers....microwave 3 min....take out and hold the pointed end with a towel...cut off the last row of kernals on the stem end. Then squeeze it out of the husk. Not a single silk remains and it's delish!!!!
Kristin, if you don't like a garlic press, do what I do, grate it, you don't even have to peel it. Same effect but much less hassle. I do the same with ginger, cut the end off and grate it, the peel just comes right off. Great meals this week, thank you so much for sharing xx

Lipton onion soup mix hack for you since you're not into the onions. Those dehydrated onions are the same onions used for onion powder. Next time dump the entire envelope into a small food processor or a small blander cup and just blend the whole thing into powder. BAM! Onion flavor without the actual onion pieces and without having to throw away half of the product that you paid for!
For the okra you need to put some flour and corn meal in a baggie and add okra to coat then pan fry it until golden brown. Hands down the best thing ever. No slime I promise

Everything looks so good. I guess I better check the store prices. I didn't realize ground chicken was cheaper than hamburger. I use to use it in place of it years ago when my now ex was on the Weight Watcher diet. I just remember I would have to add extra oil or spray to the pans so nothing would stick. I have trouble with over cooking chicken breast too. Well have a good weekend. 😊
I use a butter knife to get the garlic out of my press, it gets all the corners, then I rinse it immediately so the garlic doesn't stick. Great recipes!
I always use a microplane to crush my garlic. Very easy to clean and I can also use it for ginger, hard cheese like parm and to zest oranges and lemons.
I’ve heard people say that you don’t need to poke potatoes but I have had the skins split if I don’t poke them. Not every time but often enough I play it safe now. Great recipes, I’m looking forward to trying some of them.
Great video as always! If your kids love Ramen you should make this for them... left over steak (or any other meat Kilbasi is really good too!) Sautee an onion and 2-3 stalks celery add chopped garlic and meat of choice. My fav is left over steak. Add enough water to cover and simmer till very tender. I like to season with the Ramen flavor pkgs more garlic and onion powder as well as pepper (no salt you will regret it). When meat is tender and well cooked add half to whole pkg frozen peas and whole pkg broccoli along with your noodles. I use 3 pkg for 3 teen age boyz and my self. When noodles are done dish up and enjoy.
Everything looks amazing. I make a "twice" baked potato like you did the potato skins , but I use the leftover to make a mashed potato style mixture and add it back to the skins and top it with cheese and bake it again until the filling is hot and the cheese is melted.

I saw on Cook's Country a technique of standing the ribs up against the sides of the Crock Pot. Only problem is you need a tall crock pot or short ribs, lol. Awesome that the kids ate the broccoli 🥦.
Don't know why, but your chicken bake inspired chicken enchiladas for dinner tonight. 😅 Also, I made meatloaf once, using ground turkey and beef and I swear thee turkey made it taste funny. I want to try your chicken mini meatloaves, but I'm worried we won't like it. We'll see what happens.

Try using the corn remover the other direction, handle up. Stand the cob straight up and push it down the side. Works way better

Are your kids much on citrus like lemon juice? Cracker Barrel actually tops their steamed broccoli with lemon juice and I love it!
