    Ingredients:
    2 pounds of untreated shrimp with shells on
    3 tablespoons olive oil
    1 cup dry white wine
    half stick of butter
    head of garlic
    1/2 teaspoon red pepper
    4 tablespoons lemon juice
    1.5 teaspoons corn starch
    1 tablespoon thyme
    4-6 servings of linguini
    process: cook shrimp shells in butter and oil until colored (3-5 minutes). deglaze with wine and add thyme. strain liquid (2/3 cup left roughly)
    brine shrimp in cold water with 3 tablespoons of salt and 2 tablespoons of sugar while shells cook
    chop head of garlic and combine lemon juice and corn starch into a slurry
    clean pot and add oil, garlic and crushed red pepper until fragrant. add wine / stock liquid back to the pot.
    once simmering, add shrimp and cover to poach in liquid for 5-8 minutes.
    cook linguini while the shrimp are poaching in salted boiling water. scoop out 1/2 cup of pasta water for later
    remove shrimp from liquid with a slotted spoon, add slurry mixture to thicken sauce and add back the shrimp, cooked pasta and pasta water.
    stir the pasta vigorously to absorb the thickened sauce. add half stick of butter and garnish and serve immediately.
