Awesome Tommy, I've cooked Oxtails a few times Osso Bucco style, like a stew. Beef Shanks are good also. The ones you smoked looked ready to eat when you took them off the grill. lol
I don't get it. You removed fat and smoked the oxtails until it gave up most of its fat and then you introduce beef tallow? I don't get it but to each his own. I was done when the coke was introduced.

Those should actually be very tender with no resistance. It looks good tho. Might be slightly overcooked tho.
