@@bogey19018 don't matter, as they ripen, they should be picked with just a tinge of "purple". they let the olives age on the tree because they shake the olives off the tree by that time it's past prime and now bitter. they won't easily come off. the best olives are machine picked at the right time so no bitterness. if you would like, go to corto olive oil and see for yourself. one of many TOP quality producers in the world. Wow! So interesting and beautiful. Watching the oil dripping form the press... I could watch that for hours. I kept thinking "I wish I could smell it." It must be so delicious.
Our little village frantoio is just the same - cold press - less oil but much better quality. But no visit there for us this year, the completely dry summer in Basilicata left us with no olives at all on the trees. :( Let's hope for better next year!

I think there's no secret. From what I know, the different colors of the olives are only due to the different degree of their ripeness. It is said that the best extra virgin olive oil is from olives not fully ripe.
Not all olive tree produce black olives. Some are green even when full ripe. that s a blend of different olive's varieties. Some with early and some with later ripeness degree

The paste that come out as a byproduct from the press after the first oil extraction can be treated again to extract even more oil , low quality thou, which sell for less than half price than the extravirgin one. What it remains is mostly the ligneus part of the seeds that can be press in pellets for stoves. The paste can also be use in anaerobic fermentation plants to produce biogas and the leftover product can be than turn into compost. Not every oil mill follow these steps thou.

In der Ölmühle darf während der Presstage nicht mit Chemischen Mitteln gereinigt werden, Sägespäne und Putzlappen sind erlaubt, auch die Pressen werden mit Wasser anstatt Hydrauliköl betrieben.Es wird alles vermieden was dem Öl einen schlechten Geschmack geben könnte.
