Curious how the shoyu at Mitsufuji compares to these particular shoyu ones? I have only ever had the shio at Mitsufuji and loved it, and considering going back to try the shoyu! Is it above average?
Mitsufuji has an aweome shoyu - you should def try it! Their shio is of course great too. In this video, Kashiwagi is more in your face flavor-wise, whereas Kouji is refined classic, and Kinari is similar to Mitsufuji in that its modern...but the balsamic vinegar gives it a unique flavor. Mitsufuji has this warm and sticky chicken flavor 😊, moreso than these other bowls. I'm sure you'll like it!
The third bowl is excellent! White rice is simply ordered on the side in a separate bowl. Besides eating the rice by itself, some might dip the rice in the leftover soup. I unfortunately don't usually order rice because I'm saving room for my next bowl 😅
Getting those reps in at the end! 💪🏻 I actually walked right past Mendokoro Kinari in 2018 without realizing it (assuming it was in its current spot then) to hit up a clothing shop around there. Seems to happen a lot now that I find out about places I literally walked past without knowing about them. 😅

Usually not, most ramen shops use the ticket machines to make the service faster and "no talking" is part of the in-and-out culture of ramen shops, so if i was you i would take advantage that our host shows us what each button says and take a screenshot and order that way
If it makes you confortable to only go to ramen shops that have buttons in english or that are english friendly, you can do a little research and find some guides and only visit shops that are english friendly for the first few times to feel more comfortable.
As mentioned below, top left is usually the signature dish and the layout of the ticket machines as per the video screenshots are good to know beforehand - so you know what to press. The Japanese can be very helpful but these ramen shops are also quite busy so staff might not always have the extra time to help out. I would go in memorizing the ticket machine and just making sure you have bills ready!

Next time you're back you can add them to the list! The line isn't that bad either, and on quieter days there's even sometimes no line.

Growing up in Hawaii, I always thought shoyu was a local term because that's what we call soy sauce.
