My mother made (or attempted to make) cooked old fashion fudge but it wouldn't thicken up so she was going to throw it out in her frustration. My brother made the best brownies I've ever eaten with that failed fudge!

My mother was known for making fudge that never hardened, but it never stopped her from trying. As soon as she started making it, it was time to run to the store for vanilla ice cream. It made the BEST hot fudge sundaes!

I have my great grandmother’s and gramma’s tablecloths and napkins in a drawer. You speaking of tablecloths brought tears to my eyes. I need to get them out and use them everyday. Nothing lasts forever. There are only a few of us left who ever knew them and can appreciate their hard working, ingenuity, and skills in so many areas. Thanks! 💙

If u are not a bean person, I would use those to make a white chicken chili. You can puree some to reduce the amount of whole beans and it thickens the chili. Then, towards the end add some cream cheese to melt in. You will not regret it!

Here’s a great tip that I got from a farmers daughter a few years back, when corn is in season and a good price, take it and keep husks on but just cut tops and a little bit of the bottom and freeze them whole ( no blanching required )in freezer bags. When you are ready to use take out and put in the refrigerator over night and cook as needed. You will be amazed

I have frozen corn with and without the husk. No blanching. Then cook like normal. So much better than the frozen ears you get in the store. Not even mushy.

I’m currently a caregiver for my 85-year-old dad while working full-time mostly remote. I try to cook on Sundays so the rest of the week it’s so simple to just heat up the meals. Today I am using a 1 pound package of chop meat and making chili with a ton of beans and vegetables, a small meatloaf That I will serve with some sort of potato and vegetable, I made chicken thighs in the crockpot yesterday and had enough leftover to make a great chicken soup so we will have that one evening as well. Friday night is always pizza night so there’s a few frozen ones or I can make homemade with a salad. One to two days a week I’m traveling so I hire an aid to stay with my dad and she will make him a sandwich or heat up leftovers, and I usually go out for lunch on the days I’m traveling so the left over lunch is my dinner. Thank you for all you do!

For the week's menu plan, we are making meals with what was on sale this week. We made a one pot cajun pasta with shrimp and andouille sausage, with homegrown tomatoes and zucchini. Then I'll make an orange chicken and white rice. Then fried rice with the leftover veggies and rice. Leftovers one night. Then I'll do a breakfast for dinner with homemade pancakes and biscuits, bacon and eggs and if we need one more, sloppy joes or barbecue meatloaf. (Kid favorite). For a special treat, I made pumpkin bread.

This weeks meal plan is: 1) Lean ground beef stroganoff over penne pasta (type of pasta that I had in the pantry to use up) with steamed broccoli,
    2) homemade hamburgers with tossed salad & Corn on the cob, 3) oven baked chicken drumsticks, baked potatoes & tossed salad, 4) Old Bay steamed shrimp & home grown tomato sandwiches, 5) Stir fry chicken & veggies over whole wheat spaghetti. Plenty of leftovers to use for our lunches and easy reheat meals for the 2 evenings that I’ll come home super tired from busy days scrubbing in on surgeries at work.

    Auntie Emmy and Uncle Paul!
I just got a new job that means I’m not home to make dinners so meal planning is a must. I follow Acre Homestead here on TH-cam and she does a lot of freezer meals. Last month I made about 30 freezer meals - some casseroles (chicken noodle, tuna noodle, and an Italian sausage rice one with eggplant and zucchini) , some meatloaves, meatballs, and marinated chicken (Asian zing, Greek, peach chili, pineapple jalapeño). Doing this has save me so much time and money that I did breakfast too. My freezer is filler with sausage and egg McMuffins, bacon ranch avocado egg cups, breakfast burritos, and waffles. Again saves so much money and I know my kids are eating a good hot breakfast.
    Here’s our menu this week
    1. Instant pot zuppa toscana soup
    2. Italian pot roast, orzo, Brussels sprouts
    3. Asian zing drumsticks with lo neon
    4. Leftover buffet
5 breakfast for dinner. Probably sausage gravy biscuit and eggs.

What I like to have on hand is 1# ground beef, pasta, jar of tomato and Basil spaghetti sauce. Fry the meat into crumbles. Meanwhile boil water for pasta. When meat is done, add jar of sauce. When pasta is al dente, drain and add to meatsauce. I usually add diced onions and peppers, extra oregano.

The pantry is filling up with self stable foods. Don’t forget to have some canned milk, freeze some eggs if you get them on a good sale! Winter is coming and the droughts of this year will impact next year. Be ready people, a little stock up every week with bargains slow and steady wins the race.❤️🙏🏻

My meal plan for five days:
Tuesday-Rotini pasta with sauce made of fresh tomatoes/garlic/onion from my garden and a whole bag of spinach that got accidentally frozen and I didn't want to waste it. I cooked the pasta while I sauteed the vegetables and then put them in the blender--it made a beautiful emerald green sauce. We had it with some canned green beans and a fruit salad made with fresh nectarine, a cup of pineapple, two strawberries from the garden, 1/2 cup of vanilla yogurt and a handful of mini marshmallows (treat for my husband)
Wednesday - Crockpot beef stew (with potatoes and carrots from my garden) and cornbread sticks
Thursday - ham slices with scalloped potatoes and broccoli
Friday - some kind of shrimp recipe (I bought some frozen shrimp at my last Sam's Club shopping trip)
Saturday - grill-out with chicken breasts, corn on the cob, and cucumber/tomato/onion salad

i just cooked a bag of dried beans, so my meals this week will be bean based... So, i will do baked beans with mashed potatoes, bean rice (portuguese recipe) with pan fried fish and green beans, veggie lasagne (no beans in it), bean and cabbage soup and pasta with chicken and peppers (no beans as well).
I have a very limited freezer space, so when i cook dried beans i eat half of it during that week, and freeze half and eat it during the rest of the month and the next month. i do it every other month, so we have a cheap and nutritious ingredient to base our meal, but don't get tired of eating always the same. it helps that we love beans.

I love meal planning, I feel lost when I don’t have a meal plan for the week. This coming week will be roast chicken w/squash from the garden, then I will use the remaining chicken for chicken and biscuits for Sunday dinner. That’s my husband’s favorite meal. Monday will be bow tie pasta with sausage, sweet potato, and spinach from the garden, this will have a cream sauce to blend it all together. Tuesday we will have acorn squash from the garden stuffed with sausage and stuffing. Wednesday will be Mac and cheese with ham. I canned the ham earlier in the year. I’ll cook summer squash as a side dish, again from the garden. Thursday I am going to make risotto and I am going to try beet risotto. I’ve never made it but we have beets that a friend gave us from his garden and I thought we would give it a try. I will make a loaf of homemade bread to go with a couple of these meals too. If I get too many negative comments on the beet risotto from my sons I can switch it to mushroom risotto. My husband brought home a small bag of chanterelle mushrooms he picked yesterday and they are always a hit in our house.

I will do the tablecloth hack with my grandmas table cloth. This weeks is one chicken into three meals. First chicken with veggies , chicken pasta Alfredo and then tacos. Next tuna fritters with home grown squash and salad , last 8 ounces of ground sausage over rice mixed with veggies. Thank you for your videos. Our gas in Cali is almost $6 a gallon but our veggies are less than yours. Eggs are up here too.

There is alternative to your tablecloth hack. Many decades ago BHG, or was it Women's?, layered two square cloths at 90 degrees, it created an 8 point usually shown with a solid dark on the bottom and a pattern on top. Personally, I used to use a solid cream on the bottom with a highly colored cloth on top.

For Molasses, if you look up the ratios, you can use molasses and white sugar as substitute for brown sugar. Here, brown sugar is only a few cents off of white sugar, so there might or might not be an advantage. Molasses lasts for a very very long time, and so does white sugar.
As to this house, I have an assortment of left overs that will be the next 2 days. Then I will do my favorite "dirty" potatoes which are potatoes fried with sausage and onions. They go great with the next morning's breakfast, when all you do is heat the left-overs up and crack an egg on top. This weekend thanks go to my friend who supplied me with a dozen local-back-yard-chicken eggs. When the ladies come over for lunch, we will visit Spain/Basque country and have Tapas/Pinchos. Beginning with a wonderful green salad, we will have bread and dipping sauce, a set pincho/tapa of eggs and olives, 1 pincho/tapa of potatoes and eggs known in Spain/Basque country as a tortilla, another of mushrooms fried with onions, and a "custard" far different from anything we Americans are used to with sweetened, cinnamon cream. These are foods my wonderful Basque grandmother taught me to appreciate and I am glad to pass the tradition on. No one should leave the table hungry, for sure.
I hope that this inspires you to investigate Basque culture and recipes. For the most part, recipes are based on agricultural customs and food available. The above menu feeds 4 people with 11 eggs. The last 1 will feed my service dog, Nike. With the "free" eggs, and a $5.00 off coupon, the entire luncheon, not counting the cost of the electricity to cook these things, will be about $1.25/person. Oh, and I always make the salad dressings at home from scratch. Bottled dressing is so much more expensive and it doesn't taste as good. I will be happy to share any recipes you would like to try.
Thank you for your excellent information. I would have used the sweet butter as a basis for a custard or another dessert. I am glad that your choice was splendid.

I ruined some apple muffins once. They came out too dry. I salvaged them by turning them into bread pudding. My kids still ask- can you ruin some muffins soon so you can make that bread pudding?
The last time I made meatloaf I doubled it by adding lentils cooked in beef broth to my beef. I froze the extra meat loaf for a night that we need an easy meal. Doubling recipes and freezing for later can be a great “fast food” solution.

Thank you Emmi and Paul for your delightful videos! You teach, encourage, and are an all around blessing! Meal plan ideas: 1)slow cook chuck roast in beef broth from this one dinner with the beef + sautéed bell pepper and onions + roasted zucchini and brown rice; 2)another night using the slow cooked beef--add flour to the broth to make gravy and a can of mushrooms and pour over slices of homemade bread + fresh veggies;3) use the leftover rice more of the beef and some canned beans to make burritos ( add salsa and cheese to taste); 4)BBQ some chicken to serve with rice or roasted potato wedges and salad; 5)use leftover chicken for a salad with lettuce and other veggies; 6)use leftover chicken to make a taco night -- use the bones to make broth in my slow cooker

I know you visit Amish country in Lancaster County and I’m not sure if each area of the Amish have regional specialties so if you come across any fry pies have Paul give them a try. This week our daughter is coming for a visit, so we will be using a little more food than usual, but it's all coming out of our freezer and pantry. Monday: chicken and rice stir fry, Tuesday: lasagne, already made and frozen into portions, Wednesday: hot dogs and corn on the cob, Thursday: pulled pork in the crock pot with homemade cole slaw, Friday: fish and chips. This meal has to cook in the oven, but only about 20 minutes. Thanks for another great video, especially the fail.
