Could be so kind and give me an alternative with white chocolate? That can have a great texture and keep its shape? I thought of changing in the syrup cocoa with powder milk. Maybe I have to adjust the quantity of cream... What do you think? Or maybe you have a better idea. I know Swiss and Italian merengue butter cream but I want a more like ganache... The texture of this cream and montée cream is very similar, so I recommend a recipe that is not complicated. Hi Joon... The recipe tastes amazing straight out of the fridge... Like a mousse... But when whipped, it turned to liquid and it didn't whip up like it should. I have again refrigerated it and might use it without whipping it once more? I have used 530g heavy dairy cream not heavy whipping cream

Use liquid whipped cream. Boil 90g of whipped cream with other ingredients to make a chocolate mixture, then add 530g of cold whipped cream at the end and mix.Please check the video again. Sorry for the confusion.

You can freeze the leftover cream, but the quality may be lower than the texture before freezing. The refrigeration period is expected to be around 3 to 4 weeks. In my case, I eat the leftover cream with various desserts.😊
What is different between heavy cream and heavy whipping cream in the final texture? Which one is more strong for cake frosting? Or is it the same? Thank you
From my experience, the texture got better when I used heavy whipped cream. Of course, there may be differences between products. It doesn't make a big difference, but I prefer heavy whipped cream because it saves a little time to whip, and it's easier to buy products.

Hi Joon, would like to clear something. When you have liquid eg- 90g is that 90ml, or 530g of cream is that 530ml of cream? Can you please confirm. Would also like to wish you and your loved ones a wonderful Christmas Season.
90g of heavy cream = 88.9ml 530g of heavy cream = 522.63ml , which is about 1.5% of the weight and volume difference. In this recipe, it seems that there will be no big problem using ml. Have a warm and happy holiday season.🎄
