however, if Utah was a closer then that would be a problem, because she's basically the queen of Summer Luau and it would definitely be a problem if Jojo was a regular customer because he's the only food critic and no one can replace him

Theoretically if Jojo was not a closer/food critic Big Pauly could take his place considering that was the original plan in Papa's Pizzeria. As for Shannon and Utah being a closer, I feel like Shannon could only really be a closer if she was suspicious of something about the resturant (perhaps if the chefs were Mousse and Whippa or Guy Mortadello or someone else of dubious nature) and I personally can't see Utah being a closer.
