I don't know if anyone else has said this, but I'd put the cheese down in the center before the turkey. When the potatoes are almost done I'd put more cheese on top so it doesn't get too brown....it'd still be smokey without the color making it look burnt. Thanks for this vid, it'll now be part of my repertoire!

Pawno Only Well this is a little tricky to answer because I'm not familiar with the type of wood you use to smoke food with. In North America we use fruit wood and some hard wood.
so fruit wood is just from any fruit tree or certain trees types like apple or orange or what ever? So the smoke give off like different external flavor for what ever you are BBQing?
Yes, different woods give off a varying flavor and intensity of smoke. Fruit woods are typically more mild, while some hardwoods, like mesquite, are much more intense and should be used sparingly or with larger cuts of meat, like a beef brisket.
