In my small community, there are tons of bakers and some charge quite low and the final look and details of their cakes reflect their prices. On the other hand, I charge higher price compared to most but not outrageous. I have to remind myself that I am not here making cakes for everyone. I am here to make beautiful cakes with attention to details for those who appreciate and I should not sell myself short. Some will order from me and some won’t. What upset me sometime is that people would contact and ask me to help them with a cake design and after I provided them design, picture, details and price, they ended up having someone else make a cake for them. Thank you again for being so cool and being such a great mentor to us, cake makers!
Unfortunately that happens to all of us. What I have done to prevent that, is I will give a general idea of what I'm thinking for the cake. And I won't do a sketch until I collect a deposit. So I'll use pictures of other cakes I've made to give them an idea of what I can do. And also, you are so right. Not everyone will order from us, and that is okay! I totally understand that not every occasion calls for a big beautiful perfect cake! And we literally can't make all of the cakes that are needed, so there will always be more. 💜🙏
I say this 1,000 you are my Sharon Zambito...you told me a while back "If people are never turning you down you are charging to low" and man...did those words stick to me! And for anyone that's reading this...you will lose some customers when you increase your prices but I PROMISE you, you will replace them with the people who will pay. And I do the 3 quotes as well (sometimes) when I know they are trying to budget (also learned that from you).

Thank you. I needed to be reminded about the law of attraction. The mind is a powerful thing. Some people don't realize that and some of us somehow got off track and need to be reminded to refocus. I'm in a small town in South Jersey. I got fussed out by this lady who thought my prices should be so much lower. She said she could get the same price in Philly. I wished her luck on her journey and hoped she got the cake she was looking for.
Try not to take that personal. It says more about her than it does you. And that was a perfect reply. I find that when people really wanna argue about price, they will pretty much pick everything apart so it’s better to let them go anyway!

My customers rave about the taste of my cake and icing! I try not to use too much coloring in buttercream. Either I cover dark cakes with fondant or I use this method when icing cakes with dark colored buttercream: th-cam.com/video/tTEb690qtJc/w-d-xo.html

It is hard because everyone has a different preference. But generally, when I torte layers, since they are thinner, I do a thinner layer of filling between the layers and when they are thicker, I use a little more. I will have to see if I can figure out a specific thickness that I frequently do.
When you quote 3 prices, do you already know what the final design in each price tier will look like, or just a rough idea? Or do you wait and figure out your design after they tell you which price tier they want? I would love to streamline my quotes. For instance, like you said, my lowest quote would always be a couple edible images and happy birthday with their name, then the 2nd and 3rd add more details, and that becomes my process for each customer? I feel like I spend so much time googling ideas to figure out what I'll do for those 3 options, BEFORE I quote, it becomes time consuming and I don't even know which one they will pick yet. I guess I'm basically asking when do you decide on the final design, before or after they agree on the price tier? Hope that makes sense!
No when you are putting out quotes 100 you already know it’s basic butter color theme message writing n that’s it that’s what would come on the cake or if you agree to give edible images at that price … if you told them 200$ n they’ll get Fondant pieces you’ll have to be specific in the fondant details that they’ll get n even how many fondant work bill be on it and for the 300 u decided to go crazy in the fondant work n more details to the theme.. but the pricing and what the customer gets always come from you just make sure your very detailed about what comes with the prices you give… for me I don’t google ideas unless the customer is giving me creative control (meaning they want me to come up with a look for the theme they give me) for instance a winter wonderland cake but they don’t have any idea or specific look and the by want me to come up with sometime creative and cute,the first things I ask is “what’s your budget” after hearing the budget then u start telling them what they can receive for that price

How about the folks that throw out a dirt cheap price they claim they got from another baker in hopes you would match it 🤣 I’ve had that recently… she says “How much would you charge for a 2-tier and 24 cupcakes, so far I’m told $100 by another baker.” Me: “Oh ok, yes it would be XYZ (we’ll above that). Thanks for inquiring!” On to the next.
I recently did a 6” 3D hamburger and fries cake and charged $65. Instantly regretted the pricing afterwards. I should have charged $100. The cake looked amazing! #trialANDerror

Giving options is the key! And definitely stick to the prices.
And people will contact you just to see what you charge, that's okay!
