      unfortunately, it is not easy to find 100% buckwheat soba noodle outside of Japan. but I am planning to make a video, where you can make it from scratch with 100% buckwheat, so pls wait for it!

    I eat zaru soba often. I'm going to try your recipe for the mentsu. I will often mix wasabi in the mentsu along with the negi. I save the soba mizu and when the soba has been eaten, I pour the mizu into the soba cup and drink the remaining mentsu. My Kaku obi is very similar to the one you're wearing.     I LOVE soba noodles! I've had them like soup and cold with a dressing. After watching so many of your videos, I think the dressing may have been a combination of mirin and soy sauce as it was like a light soy but was sweet? I had it that way at a sushi restaurant and it was my first time having them cold, and I loved it that way too! Thank you for sharing this recipe. I've never seen them eaten with tempura, so it was educational, a different way of having soba noodles. :)

    Watch your video, I'd think cooking for oneself could be fun~but when I think of how it is when I cook for myself every day, it's not as fun as how you showed in your video. Is there a trick?

    The information about soba noodles and the percentages of wheat flour added was very, very helpful. And the part about adding cocoa to make them "look like soba" was a bit frightening! I am glad I know what to look for now, and so may try soba noodles at home.

      yes, I was also very surprised to see such "soba" with cocoa powder in the ingredients!! if we as consumers become well informed, then such products will disappear. so I am glad to help that movement!

    All of the soba noodles at the market had wheat in them, unfortunately for me, as you mentioned. I bought some buckwheat flour to make my own. I don't care if they break! Is there anything aside from water that I need? I don't need to impress anyone else!

    It’d be nice to learn a bit about you. It seems that you are a Japanese National living in Germany. Are you there for work, school … temporary, permanent? How did you become so proficient in English. Have you lived in the US in the past? Inquiring minds want to know.

      i grew up in Japan, went to high school and college in the US then worked in Japan for a while, came to Germany for my masters and stayed for work. I work as a math teacher in German a high school.

    This is definitely going into my "favourite recipe" folder! It looks amazing, and I love tempura mushroom and shrimp/prawn. Thank you!! On the subject of deveining shrimp, I have seen a number of people doing a nifty trick using a toothpick to devein them, do you know how to do this? if so, could you show us?
    On a side note, I am a "best for last person", too - my mom, tho, used to be before she went to boarding school. There, if you try saving the best for last - before you knew it, her fellow diners were like the seagulls in "Finding Nemo"..."Mine! Mine! Mine!" and all her "best for last" savings were gone!

    Please tell me what kind of peppers were those you used? This looks amazing. Such simple food but so decadent and soothing to the soul 🥰thank you for sharing with us. And btw if I’d slurped the way you did my mom would’ve come apart lol. I believe it’s a compliment if you do that in certain cultures though!! Sounds like you enjoyed it🥰

      i am using a kind of peppers called "Shishito peppers" originally japanese, but nowadays they can be found in many countries outside as well.
      as you say, it is a compliment to the chef, if you slurp, but of course even if you didn't, doesn't mean that it didn't taste good, no worries.

    Looks so delicious. Even if I don't like mushrooms and seafood I'm so tempted to just try it.
    Honestly the first thing that stinged my eyes was the German flour, baking powder and cooking oil. Immediately made me grin.
    Since I discovered your channel my interest in cooking more japanese dishes increased significantly. Thanks for making those videos:-)

      good news, seafood and mushrooms are not the must have, but you can make pretty much any veggies as tempura to go with soba noodle!!

    Really love to try this. One of the challenges is to find the right ingredients, especially the Dashi powder. And the high quality soba noodles.

      @@katied8238 We don't have Amazon in our country though. But I was glad to see from a local shopping app that the Dashi powder is available. Can't wait to start preparing some Japanese dishes! One of my favourites is the Katsudon. 😋😍😋😍

      well, soba noddle it self is strictly vegan. and depending on what you make with Tempura, then you can easily make this vegetarian Tempura Soba!!

      you mean Buchimgae? for sure, but you need to add more flour.
      any veggies will work, carrot, zucchini, cabbage, sprouts, scallion, eggplant etc.
