Those look nicely marbled. I've had terrible ribeyes. They were organic grass fed, grass finished. They were tough as leather. The package didn't list a grade, so I suspect by USDA standards, they were less than select. I've had awesome sirloin steak, but it was prime dry aged. The grade of meat makes all the difference in the world. Can't say I've had or seen a chuck eye in my local stores but would definitely give it a try.

Ribeyes are overrated. I enjoy Denver steaks, top sirloin, chuck eye, NY Strip and an occasional ribeye. Great looking steak sandwich Tom!
