the problem with something this size is that, you gotta cook it at lower temperature, or you end up with a crunch exterior, and a raw interior. not calling this raw, its medium rare, but the point is still valid. i rather have a more consistently cooked beef, even if smaller.

If it's freshly ground beef then it's fine. You shouldn't really do it with packaged ground beef. It's most likely that the place ground some fresh beef which would make it fine as it hasn't been exposed for long before being cooked.
There's a Belgian frites place here that has a burger that uses a similar heavy on the sesame type bun but the bottom part is twice as thick at the top bun which is excellent when you have a thick juicy burger.
