Broadleaf plantain, in my experience, is not stringy and tough if the leaves are picked when young. It can be eaten raw, but is also good cooked, and becomes even more tender. Redbud: the young, shiny leaves are ediblem and the young pods are, also - three different crops from the same tree!

Another name is henbit dead-nettles, so it's most likely the same plant.
