    Servings: 4
    To Make Karela Pyaz Sabzi
    Bitter Gourd - 2 Nos
    Oil - 4 Tbsp
    Cumin Seeds - 1 Tsp
    Onion - 4 Nos
    Salt - 1 Tsp
    Turmeric Powder - 1/4 Tsp
Kashmiri Chilli Powder - 2 Tsp
    Cumin Powder - 1 Tsp
    Coriander Powder - 1 Tsp
    Amchur Powder - 2 Tsp
    Garam Masala - 1 Tsp
    Jaggery - 2 Tsp
    Method:
    1. Wash and cut the bittergourds into slices of medium thickness.
    2. Remove the seeds in the middle and then rub the salt on the slices thoroughly.
    3. Let the bittergourd slices sit aside for about 10 mins.
    4. After 10 mins, wash the slices with fresh water to remove the salt content and strain them. Keep them aside.
    5. Take a wide pan and add oil to it. Add in cumin seeds and saute for a few seconds.
    6. Add thinly sliced onions and saute for about 3 mins.
    7. Then add in the bittergourd slices, mix well with onions and saute for about 10 mins.
    8. Add in salt, turmeric powder, red chilli powder, cumin powder, coriander powder, amchur powder, mix well and stir fry the sabzi for 5 mins.
    9. Lastly add garam masala powder, jaggery powder and give it all a quick mix.
    10. Saute for a few seconds and then turn off the stove.
    11. Garnish with some chopped coriander and serve the Karela Pyaz Sabzi hot and nice with some roti or rice.

Never wash the vegetables after chopping. Add more tanginess, jaggery and spice to remove bitterness. It tastes much better
