    When I grew up in the Philippines, my folks would discard the large purple leaf and turn the small little "blossoms" into latke-like pancakes with flour and eggs, I believe we called them "okoy". They were absolutely great with vinegar or banana ketchup and they were also a great hangover cure.

    Jared, add some diced potatoes next time...one of local delicacies of east / north east India and Myanmar. My mom never added lime/Lemon to it, but we used to take diced limes on the side

    Some of the absolute best vegan mock fish filets I've ever had were made from battered and fried banana blossoms. They soak them in seaweed brine for days and serve it with chips. The texture is really incredible that way. I'm going to try and recreate it with canned banana blossoms. Thank you for the curry inspiration as well!

    That was the pistil (ovary) you discarded from the little flower. The stamens are the little things that surround it.

    I know this video was posted 5 years ago, but having bought a banana flower for the first time the other day, for an additive to tonight's stir fry, this video came up in my inquisitive google searches. Although I bought the smallest flower available, there's waaay too much veg for tonight's dish, so I'm only using the outer florets for now, and saving the inner flower for later use.
    This video was incredibly helpful, as I was afraid the several hours I'd allotted for the acidification to remove the bitterness, might not be enough. Also, your curry sounds delicious!
    I've been a subscriber to your channel for quite a while, and I proudly wear your female mandrake t-shirt. Thank you, and your team, for doing what you do!

    Grew up eating banana flowers in salads and soups. One of my favorite ingredients. Underrated.

    In Thailand, fresh banana blossom petals are often eaten with padthai, papaya salad and with spicy dipping sauce (nam prik). It has to be soaked in salted water first to get rid of access sap as that can be bitter. The flavour of raw banana blossom is astringent, it's an acquired taste, I and many Thais love it as we have eaten it since we were children, understandably many foreigners hate it.

    I wonder if banana flower would be good for kimchi or in bibimbap.
    Something that would be very interesting to try are fern fiddle heads, ferns don't have fruits of any kind, but they are still a very interesting thing to try non the less. There's ostrich ferns (_Matteuccia struthiopteris_) that grow in a lot of north eastern states, maybe you could find someone to help identify them, or find out if there is any specialty stores that sell some. If there is a korean food store around ask them if they have bracken (_Pteridium aquilinum_ )fiddle heads (Gosari in Korean), it has a very unique taste similar to an herbal lettuce, you may be able to find out if there is a Korean BBQ restaurants that prepares dishes with Gosari and where to get some from them.
    Just don't go looking for them out on your own, without getting significant knowledge of what your looking for you may eat some other fern that tastes nasty. Or even in the case of bracken ferns, under preparation could expose you to carcinogens, in that case I'd say stick to store brands, and learn how to prepare it safely. Ostrich ferns are much safer to eat but sold less often, so it may have to be something foraged for instead, in which case you should really consult an expert for.

      I've never seen them in stores but my Mom and I tried them eons ago and didn't like them. We may have tried the wrong ones as you had mentioned so I guess I would like to try them again but can't get them around here.

    Banana blossom is actually a traditional side dish of Pad Thai, you use it pretty much like a (fresh) bean sprout, it adds volume to your dish and also a bit of that tannic texture

    In Bengal we make this into a dish called 'Mochar Ghonto', usually cooked with coconuts and shrimp. Its excellent paired with rice and dal.

      As a Thai the “jasmine rice” in thai is actually called “Khao Hom Mali”which directly translated to“jasmine aroma rice” or something along the line. Its the best of all rice for me (for all round dish)the aroma best, texture best, flavor best and leave it overnight having it as “cold rice” which for other kind of rice can’t even match. They’ll ether dry or soak by their own dehydrated water in the container .

      @@WeirdExplorer We didn't have time to peel them all at one time so we haven't eaten yet after we peeled one leaf back we saw how quickly it turned brown. It's on the menu this weekend!

    I have never seen a banana flower that mature but usually the canned ones I have seen were picked at a much younger stage. I love chopping it into stripes and stir fry it with herbs. pork or chicken are the preferred meat.

    the part you picked out of the center of the flower is likely the pistil, the female part of the flower. the stamen were left behind, theyre the other stalks

      @@eriksonyw There are many languages in India. In my native language Marathi, it is called "kel phool" meaning banana flower. You can search for "kel phoolachi bhaaji" for recipe

    I wish I had regular access to those. I once found them at my Asian market nearby, but they were kind of an experimental sale thing, and I am guessing I may have been the only one to buy them. Made a banana flower salad, and it was so good!

    The banana heart is usually found in south east asian cuisine! It's made into a salad or an ingredient in soups. You discard the tough outer layer and you cook with the softer, lighter colored inner layers. The sap is something you want to clean off too. 👌

    Hi, we actually cook that and it. We have several dishes with that. Comes with soup and fish. It’s really good. Taste like meat when you cook it.

    My mom prepares this dish (I don't have the patience for it). It has a slightly bitter after taste.
    We also eat the banana stem (I think only young banana stem which is still soft is used). I like this better, it tastes like chestnuts and has a crunchy juicy texture.

    Believe it or not that exactly how they cook in India they just throw what they have laying around and sounds good together and they are some of the most inventive cooks because of it

      Yeah exactly. I learned how to make a couple Indian curry dishes and now I use the same technique with other veg. If you have an idea of what flavors go with what spices you can get creative and make some surprisingly good dishes without any recipes.

    Very nice, I found em on sale at a Mexican market and was searching for some recipe to throw em in tacos. I think I'll just add onion, garlic, a tomato, an Anaheim pepper, I've got some dried Guajillo's and Chile de Arbol I'll make a paste out of, and see how they work as a sort of meat substitute. Got some chicken fajita mix as an alternative if it's not great but by the way you described it as a neutral flavor I think it'll work!

    I’ve eaten banana flowers in Java. They are quite tough and are stewed for a while. I can’t remember if they were worth it or not.

    I used to write cookbooks and I'm going to begin again. Since I was 8 years old I never made food from a written recipe. I always laid in bed and thought this and this sound really good together and some of that would make it even better and I would get up and I would make it and I would invite people over without even tasting it first and nobody ever has complained about a meal from me. But they all come from my own head not recipes. I make recipes.

    There is a Thai Banana flower curry (Gang Hua Blee [flower head curry]) That's close (no Chick peas or Masala.) Also,the immature Bananas/flower stamens(?) are served as sides with Pad Thai for an astringent flavor.

    It's delicious because it tastes like what you mixed with it, but not like itself. There should be a category called "invisible foods" in the same way we have vehicle foods like chicken wings, tofu, escargot and celery sticks, which are mainly edible carriers for sauce or other dips/coatings/sauces.

    Great video! I always see banana flowers for sale in the markets I shop at, and I’ve always been curious if they were worth buying. I’ve never been able to decide if they were an ingredient that was special enough to go through the effort of prepping, or if it was something that people are just used to using so they keep using it... if that makes sense. I’m interested if there are dishes out there in which banana flower really shines and tastes delicious and unique, which would be with trying! I’d love for people to weigh in on this if they have experience. :)

      Its worth doing for the experience for sure, but it's so time consuming I'd buy the frozen/canned stuff if i were to do it again

    Have you ever tried governor plums? The last time I tasted one was decades ago and have not seen nor tasted one since. I tasted one in Trinidad on my grandmother's property, but the tree was cut down when a road was expanded. She even made governor plums wine with the fruit. If you have tasted a governor plums I would be interested in your opinion.

    It seems like you have to be very careful with preparation, since the banana sap oxidised in air can stain clothes, furniture, etc. forever.

    Banana flower is very beneficial for regulating blood sugar level. Eating hot food everyday on fresh cut banana leaf keeps your insulin in balance.

    I would be using my sweet curry powder from Penzeys Spices. I have garam masala and it's lovely but I think it's overpowering at times. Until you added the chickpeas you had a nice Masala going but beans don't go into the Masala you make it separately and then you add it at the end of whatever you are cooking.

    I like to cook complicated dishes but you know what, the oh, just throw everything in a pot and let it do its thing kind of dish in my experience are the best.

    I wonder if fermenting it like sauerkraut would be good? I've done that wwith green papaya and it was great.

    You cut the young flowers into thin slices.... soak into water so that it does not turn brown. Use as salad to add into noodle dish Kappoon. Not sure of spelling.

    My family shreds the banana flower and use it as a garnish for a viet dish called Bún bò Huế.
