      Good elk is like super tender, gamey steak. If you put that shit in a quesadilla you lose your chef title, those are just the rules (also considering he had Zero elk on "his farm" and a bunch of bison, pretty sure that was actually just bison, which tends to be tougher and thinner)

    Chef says it was the awful food that made him not want to continue the series, but it’s got to be having to deal with people like this. He’s not a psychologist he’s a chef lol, and the major thing these people need is counselling. Can’t make good food decisions if you are not self aware.

      @@Foxiesz live in a rural town around an hour outside of Seattle. We have exactly what you described. The restaurant might work in a city but instead it’s $50 more per plate for $5 more in quality.

      @@noorrougelewis6704 I dunno, the British version of the show has a lot of episodes where the owner earnestly does want to fix things and the problems are more around bad time management, poor cooking skills, stubborn staff, cleanliness etc. instead of just a battle of pure ego, and it's a great watch. Different show than the American version for sure but both are engaging

    I heard he was tring to sue Gordon Ramsey after the show. And say stuff like the production team stole some stuff when they redecoreted the restaurant. And he fired everyone who criticed him. He tells stories about how unfair Gordon Ramsey was to him till this day..... The level is beyond words.

      I also noticed that! And that makes me really sad about Joe, because he clearly didn't get the validation he needed in his life in a healthy way, so he does these things (talking to customers, seeking compliments about his elk) just to feel good and validated... but in an unhealthy way. It's really sad to see it put out like this, narcissists are like children in a lot of ways :(

    I lived across a narrow street to a large, unruly Pub in Wales. The new owners spent an immense amount of money remodelling the pub into a beautiful real ale bar. Just before the reopening, my partner and I met the owner outside our home, and asked him about his plans. He explained how he believed the new look would attract a more sophisticated clientele than it had in the past. When we managed to stop laughing, we pointed out that in this little town, there wasn't such a thing as a "sophisticated clientele" here.

    I dig these Kitchen Nightmares psychology breakdowns. Kitchen Nightmares in general is just a fascinating show; How Gordon Ramsay's efforts to save burgeoning businesses often ended up putting him in contact with some truly _bizarre_ and wild people, and it makes sense that not only is the show being uploaded on TH-cam so people can see these bizarre chefs and business owners, but also so we can examine the psychology of the people on display. I'll always remember the Cognitive Dissonance guy you covered last time.

      I love these too! She's does such a great job of breaking down the psychology of the people. They always make me stop and think, am I displaying these behaviors in my life in any way? I'm always striving for self awareness and Kiana's breakdowns always give me a moment to pause and self-reflect.

      Honestly, Michael Scott is a saint compared to Joe Nagy for one simple reason: intent. Michael can be obtuse and make bad decisions, but, most of the time, he means well. Joe, by contrast, doesn’t have any good intent behind any of his actions. He’s arrogant, spiteful, bitter and defensive, thinking solely about massaging his own ego and losing his cool when his perception of himself is challenged. He never even TRIES to do anything in good faith.

    I went up to Idaho for work one summer. The guys invited me to 4th of July bbq. They had elk that they hunted themselves. Elk is definitely difficult to butcher right, but can be tender and yummy if done right. What I saw on that plate didn't look like what I had at that bbq. It even looked rubbery.

    My family calls me arrogant alot so I was prepared to take a little emotional damage while watching this but the point you made about him not caring if he was a jerk he just wants to look good to people and sees others as below him that actually kinda made me realize I'm not like that. I'm actually a huge people pleaser and will say I'm sorry if I'm acting like a bitch or just think I am. I do get really defensive when people call me out or say shit to me tho. I'm trying to work on it.

    This Joe dude reminds me of my brother-in-law who abandoned his children, gets drunk and cheats on his women, does nothing at work but always posts on social media about how much of a great father, husband and a colleague he is :)) people like that will deny their fault and blame everybody but themselves even if the whole world turns away from them.     Really love these reality tv show breakdowns. Opens my eyes on things I need to either improve or observe these behaviors from other people. Also Joe talking to his customers about his problems is freaking ridiculous. The customers paid to enjoy a meal not have a therapy session with you 🤦‍♂️

    If you’re looking to do more from kitchen nightmares, how about that Italian guy Sammy, who microwaved the lasagna, great quotes such as "That soup was two days old but that doesn’t mean it’s garbage. Who is he, the fuckin health department?" and saying to a customer "You seem like a microwave expert, you know so much about ‘em"

    The greatest episode is the new Orleans episode that was removed from the series with the two brothers mo and someone else I forget his name but it's great , the staff call him "hurricane moe " it's probably the funniest episode of kitchen nightmares. Also "la galleria " is another personal favorite of mine . The "smoker" sister is hilarious 😂 😃

    I love your breakdown of arrogance. A lot of time people use the word narcissistic when they mean arrogance and with others complaining that we need to not throw important and heavy words like "narcissist" around so lightly as it does also tie to a personality disorder diagnosis, it's good to know that arrogance is a perfect replacement as it sums up everything people are often using "narcissistic" for.

    Joe's arrogance is a clear example of how confidence (Key word is 'con') can delude us in absence of self-efficacy.
    The biggest factor is Joe is not a classically trained chef. A student with a culinary certificate from a vocational school has more gastronomic acumen than Joe. He never mastered basic culinary techniques (stock making, meat fabrication, food preservation, etc), worked or eaten at a fine dining restaurant, and is just another clown with money. Without a basic culinary foundation to build on, Joe can't change his menu in any way that's efficient or cost effective. All he can do is cut costs. He thinks he can bypass the training and time it takes to be a good chef.
    I went to an accredited culinary school and have met students who rode Amtrak 3 hours every other day to attend classes. They have the drive and passion to put out good food. They deserve the opportunity to own and run a restaurant, not to have gatekeepers like Joe hog the real-estate, equipment, and decent staff members just because he thinks he's entitled to success. When play time is over and it's not fun for them anymore, they'll sell their business without a second thought, and the fake passion dies out.

    And Joe had the audacity to sue Gordon after this, claiming the camera crew messed up the ceiling before they left and meat went missing.
    Gordon and all the staff should have walked out and never came back. Joe is a horrible, nasty narcissistic person.
