We have quite a few Chinese restaurants in my area, but there's one that opened recently that stands out head and shoulders above the rest, with the best take-out New York style Chinese I've ever eaten. Their egg drop soup is divine. I'm pretty sure that they add some extra yolk to it because it's really rich. This was a cool watch, because although I've loved the soup my entire life, I actually had no idea what was in it! Thanks for the video.

Your recipe looks authentic and wonderful and I saw the others online and yours looks just like the restaurant so I am definitely in tomorrow on my day off on a cold day! Yum
My eggs have always ended up floating down to the bottom and recombining into a mass on the bottom of the pan. If you have the ability, a little extra liquid really helps so the eggs don't lower the water temp too much as you want it hot enough that the egg doesn't recombine. That said, you also don't want it so hot that it simmers and the bubbles blow out the eggs into particles either lol. Not sure how traditional this is, but I take the tiniest bit of the stock and add it to the egg mixture almost like tempering a custard but far less liquid as you want the eggs to coagulate instead of just mixing into the soup. I usually let my eggs come to room temp before I start and adding this little bit of warm liquid brings them up to temp so they don't cool down the soup too much and stop cooking when they hit the less hot water. This little bit of liquid also helps beat the eggs into a runnier state so the pour is super easy. I imagine you could just stick blend the eggs if you are doing a lot to get really well blended eggs, but I'm not pulling out a stick blender for a single bowl of soup. But again, I feel like if you add too much liquid you might end up with something like custard

I prefer using a low-sodium stock because it doesn't have autolyzed yeast extract and monosodium glutamate that regular stocks have. They rely on more fat and vegetables for the flavor instead of MSG. If you want to use regular stock go ahead but leave out the salt.
I keep low sodium versions of stocks, broths, and other things because it gives me more room to adjust from the ground up. Several dishes were ruined over the years because of how much salt was in premade ingredients.
Now THAT is Fantastic! and I love it! I also have never seen how to pour the eggs in like that either. I will try this tomorrow. This is also something I will eat even in the heat of the summer too. Thank you very much, Sheila

In New York.........Every Chinese restaurant gives you crispy noodles to put in the soup. Really makes a difference. Oyster crackers work too!
