You girls gave me a great idea I think I would use chicken thighs and when it's all done I think I would use service a warm tortilla chips with thand a few adult beverages NL moderate proportions😊
This looks very good, and I expect to make it, albeit with the addition of some green chiles 😊. Something I admire about your channel is how you use all your mise en place ingredients. So many cooking shows waste time and money leaving food in their prep bowls. Maybe waste and money are no object to some, but details matter to many, and I love your style in this regard, too ❤.

I can just imagine the flavors being so savory, not to mention the aroma while cooking. I would have drizzled (I will drizzle) the chicken juices from the 'resting plate'. More flavor!
