1 rotisserie chicken
12 corn tortillas
Mexican cooked rice
Creamy Chile sauce
3 to 4 cups of cheese
Mexican rices
Oil
2 cups of basmati rice
4 cups of water
1 small can tomato sauce
1 tsp ground cumin
1 bayleaf
2 Tbsp tomato chicken bouillon
Creamy chili sauce
8 guajillo chiles
15oz Mexican cream (1 1/2 containers if you want a lot of sauce)
1 tsp ground cumin
1 tsp garlic powder
1 tsp mexican oregano
1 Tbsp tomato chicken bouillon
1/4 cup water
For spice use 3 chiles de arbol
Bake at 380 degrees (f) for 30-35 minutes
Toppings- chopped lettuce, sour cream, and salsa
*Extra spicy use 15 🥵

Ohhhh my goodness this turned out so good!! I loved the little crunch the edge rice had and the cheese. We all ate so much we couldn’t move!! My husband said “I know I should stop but it’s so good”. I reminded him he can have leftovers. It’s getting to the point no one wants to eat out anymore. It’s nice but sometimes momma needs a break. Everything I’ve made from your channel has been amazing!!

I just made this, it’s so yummy! I had to sub sour cream mixed with heavy cream because I can’t get crema here, then I added some homemade ground habanero powder to spice it up a bit. Lastly and sadly, I had to use canned chicken. Even with all those changes I absolutely loved this!!

This casserole looks wonderful! This is the same Spanish rice I've made for over 50 years! Only difference is I sauté some chopped onions in the oil and add a splash of lime juice.
When I was in the States in Albuquerque for my son's wedding last month, I picked up Masa Harina, Queso Fresco and Cotija (yes!) plus loads of dried chiles and Hatch frozen green chiles. (I brought it all back here to France, no questions in Customs!)

When I went grocery shopping for the ingredients I was missing...the Chihuahua cheese and Mexican Crema...my husband was not sure about them 😂 He's not Mexican, and convinces himself of things he doesn't like even before trying it. Long story short...I made it exactly like you did and he ate 3 huge servings! I added 1 Chile de árbol without seeds. It was very mild. I will add 2 next time.
