French baguette? Simple: in France it's (mostly) a work of art made of natural ingredients and millenia of tradition. Outside of France it's (mostly) repulsive imitation. Sort of like Moorcock and the myriad of his rip-off artists.

The different breeds of yeast, water and egg quality will effect the taste and air content in the bread.
