    I love when pastry chefs treat and plate desserts as if they are entrees.

      Only way to do it. Make it nice, or make it twice.

    Sweet on sweet on sweet. This is decidedly a white person dessert made by a white person.

      Isnt there a natural tartness to the strawberry as well though?

    • @MikeRao
      @MikeRao 2 ปีที่แล้ว +1

      @@badnoozbear Definitely reasonable! That said, the processing of the strawberry (even the maceration of the fresh strawberries with syrup) lends to my perception of an imbalanced dish.
      Frankly, I'm sure it tastes good, as these chefs are far too talented to produce a dish that's not at least tasty, I just am personally a fan of more emphasis on balance when I cook.

      @@MikeRao I'd generally be with you on the too sweet white person dishes 😂. Its just that were basing something on what someone narrates for us, the only thing were experiencing is sight : the smell, taste and other senses are tertiary and were told about them. Just like when we are convinced a chef won a reality show because editing , judges opinions were there to skew our opinions.
      I'm hoping a show that has David Kinch hosting , a 3 star Michelin chef for his attention to detail wouldn't have an out of balance dish, other chefs like Rene redzepi, david chang , April Bloomfield, Sean brock and eric ripert would hopefully reinforce this tenant. I even think the nasturtium oil with its herbaceousness, the char on the burnt honey would balance its sweetness and the non sweet aspects of sesame like its toasted umami flavor.
      I'm glad were able to have a civilized discussion on the internet which is rare. Many times its just people attacking each other trying to disprove.
