Authentic Riz B Haleeb / Lebanese Rice Pudding رز بحليب اللبناني على الاصول July 2022

- Riz B Haleeb is the Lebanese version of Rice Pudding. It is one of our nostalgic childhood dessert that makes us remember the warmth and love of our grandmas. This 3 ingredients dessert is easy to make in one pot and it is also flavored with mastic and rose water. Tasty and delicious when chilled, Riz B Haleeb is very popular in Lebanon.
Ingredients
1 glass of Egyptian rice (short grain rice )
4 glasses water
3/4 glass sugar
3 to 4 glasses of whole milk
3 mastic tears + 1tsp sugar
2 tbsp rose water
Garnish with Pistachios and or orange blossom jam
المقادير
١ كباية رز مصري (رز حبة قصيرة)
٤ كباية ماء
٤/٣ كباية سكر
٣ الى ٤ كباية حليب كامل الدسم
٣ حبات مستكة + ١ ملعقة صغيرة سكر
٢ ملعقه طعام ماء الورد
للزينة: فستق حلبي و مربى زهر الليمون

My mum used to cook the rice and the milk together with the sugar. She would stir it together until the rice is cooked through. And in the in the process the milk has thickened up then you will add your orange blossom water and start serving in individual bowls. Leave for 6 to 8 hours or overnight in the fridge. It’s delicious! No need to cook the rice before hand at all.
Hello dear, thank you for sharing your mom method which is the genuine one.
"She would stir it together until the rice is cooked through" and this is exactly what I want to prevent.
My method is divided to 2 phases: First, I cook the rice in water and leave it on very low flame without stirring it until it will absorb the liquid and release the starch (in less than 10 minutes). Second I add the whole milk and stir on medium flame until the milk thicken then I add the sugar and rose water + the mastic till everything is well combined (in less than 10 minutes).
My goal was to reduce time and effort.
