First, this recipe looks insanely delicious! 🥭 I'm making this for sure. Last cheesecake I made was Claire Shatifs raspberry w/goat cheese cake. It was amazing & I highly recommend. Note: her method for water bath includes saran/plastic wrap. You CAN use plastic wrap in the oven✅

Mango darkening is just a natural reaction of oxygen reacting with the fruit and oxidizing it, which creates a darker color. However, we didn't notice this happening with our mango cheesecakes. We leave them in the fridge for 4 - 5 days and it doesn't turn dark. The step of cooking the mango slices with sugar is supposed to prevent this from happening - cooking the mango slices briefly with sugar should stop any enzymatic browning when it is stored after. Hello - other creams like whipping cream, evaporated milk, or Nestle all-purpose cream cannot be used as a substitute for heavy cream, as it doesn’t have a high enough fat content. Heavy cream has a higher fat content (about 35-40% fat content), which is needed for the frosting to whip into stiff peaks and remain stable at room temperature. If the cream you're using has lower than 35-40% fat, it will not form stiff peaks. So make sure you're actually using cold "heavy cream" - also called "thick cream" in some countries.
